CHEESY CHICKEN, BACON & TATER TOT CROCK POT BAKE

Cheesy Chicken, Bacon & Tater Tot Crock Pot Bake image

This is a simple throw-together dish I came up with that is great for a Sunday after-church meal. Note: You can fry your own bacon for this recipe. I like the taste of bacon but cannot handle the lingering smell it leaves in the house when you fry it, so I just buy the jarred bacon for the few times a year I use it.

Provided by Chef Buggsy Mate

Categories     One Dish Meal

Time 3h35m

Yield 1 casserole, 5-6 serving(s)

Number Of Ingredients 7

0.5 (3 ounce) jar bacon bits (I used Hormel brand)
5 boneless skinless chicken breasts
1 1/2 cups grated colby cheese
1 1/2 cups grated monterey jack pepper cheese
3/4 cup milk
salt and pepper

Steps:

  • Grease the bottom of the crock pot.
  • Layer 1/2 the tater tots on the bottom of the pot.
  • Sprinkle with 1/4 of the jar of bacon bits.
  • Combine the two cheeses, and sprinkle 1/3 of it over the bacon and tots.
  • Top cheese with the chicken breasts.
  • Sprinkle chicken with salt and pepper to taste.
  • Top chicken with another 1/3 of cheese.
  • Sprinkle with another 1/4 of the jar of bacon bits.
  • Add remainder of the tater tots.
  • Top with final 1/3 of the cheese.
  • Pour milk over the top.
  • Set crock pot to high and cook 3-4 hours.

Tips:

  • For a crispier topping, use frozen tater tots instead of fresh ones.
  • If you don't have any cream of celery soup, you can substitute cream of mushroom soup or cream of chicken soup.
  • Feel free to add other vegetables to this casserole, such as chopped carrots, celery, or peas.
  • If you like a cheesier casserole, you can add more cheddar cheese or use a different type of cheese, such as mozzarella or pepper Jack.
  • This casserole can be made ahead of time and refrigerated for up to 2 days. When you're ready to serve it, simply reheat it in a 350°F oven for 30-45 minutes.

Conclusion:

Cheesy Chicken Tater Tot Casserole is a delicious and easy dish that's perfect for a weeknight meal. It's also a great dish to make ahead of time and reheat later. With its creamy sauce, crispy tater tots, and tender chicken, this casserole is sure to be a hit with your family and friends.
