A friend gave this recipe to me and I've made it often. I've tried others, but always go back to this one. It's great when you need to feed a large gathering.

1 package (30 ounces) frozen shredded hash brown potatoes, thawed
2 cups sour cream
2 cups shredded sharp cheddar cheese
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup chopped onion
1/4 cup butter, melted
2 tablespoons chopped fresh parsley
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • In large bowl, combine all ingredients. Transfer to ungreased 2-qt. baking dish. Bake, uncovered, at 350° for 1 hour or until heated through.

Number Of Ingredients 8

1 pound of kielbasa cut into 1/2 inch pieces
1 bag (20 ounces) refrigerated shredded hash brown potatoes
(I used Simply Potatoes, they are in the refrigerated section, if you are using frozen hashbrowns, make sure to thaw them first)
2 cups shredded cheddar cheese (8 ounces)plus extra for the top
1 cup sour cream
2 medium leeks, white and light green parts only, sliced thin (you can substitute 1 medium onion, chopped if you don't like leeks)
1 package baby bella mushrooms, roughly chopped
salt and pepper to taste

Steps:

  • Oven to 350. Lightly spray a 9x13 inch baking pan. In a skillet cook the leeks in 2 tablespoons of olive oil. Cook for about 5 minutes, then add in the mushrooms. Cook until mushrooms are tender. Transfer to a large bowl. Cut the sausage into ½ inch cubes and add to the bowl. Add in the remaining ingredients and stir gently to combine. Spread into pan. Sprinkle with a little more shredded cheddar. Bake 40 - 45 minutes or until lightly browned. Let stand 5 minutes before serving.

I found this recipe on another website years ago and have been making it ever since. There are similar recipes on this website but I can't stray from this one, it's the best! These potatoes are a staple at my family functions, even my very picky little cousins love them. I usually prepare it a day in advance and bake it when needed.

1 (2 lb) package frozen hash brown potatoes, thawed
1 cup melted butter
1 (10 3/4 ounce) can condensed cream of chicken soup (you can also sub cream of mushroom)
12 -16 ounces shredded cheddar cheese, to taste
1 (8 ounce) container sour cream
1 teaspoon salt
1/2 yellow onion, diced
2 cups corn flakes cereal, crushed

Steps:

  • Preheat oven to 350°F Lightly grease one 13x9 baking dish.
  • Place thawed potatoes in bottom of prepared dish.
  • In a separate bowl combine: 1/2 cup of the melted butter, condensed soup, cheese, sour cream, salt, and onion. Mix well and spread over potatoes.
  • Top evenly with crushed cornflakes and drizzle the remainined 1/2 cup of melted butter.
  • Bake uncovered at 350F for 45 minutes.

Tips:

  • To save time, use frozen shredded potatoes instead of fresh potatoes.
  • If you don't have a food processor, grate the potatoes by hand using a box grater.
