One of my favorite ways to take a simple, ready-made food and dress it up so it tastes homemade. This Cheesy Pierogi Casserole Recipe does just that.

1 package, 16 oz frozen potato and cheese pierogies (16 oz frozen potato and cheese pierogies)
7 oz kielbasa sausage, sliced (chicken sausage also tastes yummy)
2 cup shredded Cheddar cheese, divided
4 oz cream cheese, soften
1/2 cup sour cream
1/3 cup chicken broth
1/8 teaspoon black pepper
1/4 teaspoon garlic salt
optional topping: fresh parsley

Steps:

  • Heat oven to 375°F Prepare a 2-quart baking dish with cooking spray. Place frozen pierogies evenly in casserole. Top with sausage.
  • In medium bowl, mix together 1 cup of shredded cheese, cream cheese, sour cream, pepper and garlic salt.
  • Spread cream cheese mixture evenly over sausage and pierogies and pour in broth. Cover and bake for bake 30-35 minutes.
  • Uncover, and top with remaining cheese. Continue baking for 3 to 5 minutes, until cheese is melted.

2 lbs frozen cheddar pierogies
1 (15 ounce) jar alfredo sauce
8 pieces crispy cooked bacon chopped
2 green onions finely chopped
1 cup shredded mozzarella
1 cup shredded cheddar
Kosher salt and black pepper to taste
1 teaspoon chopped fresh parsley

Steps:

  • Preheat oven to 375 degrees. Grease 9×13 inch casserole dish (or equivalent sized dish)
  • Layer half of the frozen pierogies in the casserole. Spoon half of the alfredo sauce on top. Sprinkle with half of the crispy chopped bacon, half of the chopped green onions, and half of the cheese. Layer the rest of the pierogies on top and spoon the rest of the alfredo sauce on top. Sprinkle with the rest of the chopped bacon, green onions and remaining cheese. Season with kosher salt and black pepper to taste.
  • Cover with foil and bake for 15 minutes. Remove foil and continue baking for another 20-25 minutes or until the cheese is melted and casserole is bubbly and cooked through. Garnish with chopped fresh parsley.

½ pound bacon
1 (8 ounce) package kluski noodles
¾ cup chopped onion
4 cups shredded cabbage
1 (12 ounce) container cottage cheese
10 ounces Muenster cheese, cubed
¼ teaspoon dried dill weed
salt to taste
2 tablespoons butter
½ cup bread crumbs
¼ teaspoon paprika, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly crispy, about 10 minutes.
  • In the meantime, fill a large pot with lightly salted water and bring to a rolling boil. Cook kluski at a boil until nearly tender, about 7 minutes. Drain.
  • Drain bacon slices on paper towels. Add onion to the bacon drippings in the skillet. Cook and stir over medium heat until softened, about 5 minutes. Add cabbage; reduce heat to low and simmer for 15 minutes.
  • Stir cottage cheese, Muenster cheese, dill, and salt into noodles. Add bacon, onion, and cabbage and mix well. Turn all ingredients out into a 3-quart baking dish.
  • Melt butter in the empty skillet and mix in bread crumbs to coat. Top noodle mixture with bread crumb mixture; sprinkle paprika on top.
  • Bake in the preheated oven until golden brown on top and heated through, 25 to 35 minutes.

5 medium (2-1/4" to 3" dia, raw)s potatoes, peeled and cubed
½ cup milk
½ cup butter, melted
½ pound bacon, diced
1 onion, chopped
6 cloves garlic, minced
½ (16 ounce) package lasagna noodles
2 cups shredded Cheddar cheese
salt and pepper to taste
1 (8 ounce) container sour cream
3 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes in a large pot with water to cover over high heat. Bring to a boil and cook until the potatoes are tender. Remove from heat, drain, then combine with the milk and 6 tablespoons of butter, mash and set aside.
  • Melt the remaining 2 tablespoons of the butter in a large skillet over medium high heat. Saute the bacon, onion and garlic in the butter for 5 to 10 minutes, or until the bacon is fully cooked.
  • Cook the lasagna noodles according to package directions and cool under running water.
  • Place 1/2 of the mashed potatoes into the bottom of a 9x13 inch baking dish. Top this with 1/3 of the cheese, followed by a layer of lasagna noodles. Repeat this with the remaining potatoes, another 1/3 of the cheese and a layer of noodles. Then arrange the bacon, onion and garlic over the noodles, then another layer of noodles, and finally top all with the remaining cheese. Season with salt and pepper to taste.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 30 to 45 minutes, or until the cheese is melted and bubbly. Serve with sour cream and chopped fresh chives.

1 cup finely chopped onion
1/4 cup butter, cubed
2 cups 4% cottage cheese, drained
1 large egg
1/4 teaspoon onion salt
2 cups mashed potatoes (with added milk and butter)
1 cup shredded cheddar cheese, divided
1/4 teaspoon salt
1/8 teaspoon pepper
9 lasagna noodles, cooked and drained

Steps:

  • In a skillet, saute onion in butter until tender; set aside. In a bowl, combine cottage cheese, egg and onion salt. In another bowl, combine potatoes, 2/3 cup cheddar cheese, salt and pepper. 1 pkg. (8 oz.) KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA, divided
1 pkg. (3 oz.) OSCAR MAYER Real Bacon Bits, divided

Steps:

  • Heat oven to 375°F.
  • Prepare potatoes as directed on package. Meanwhile, cook the noodles.
  • Combine potatoes, cream cheese spread, onions, 1/2 cup bacon and 1 cup cheddar.

3 cups leftover mashed potatoes or 3 cups leftover garlic mashed potatoes
2 cups cheddar cheese, grated
8 ounces cream cheese, softened
1/2 lb bacon, raw and diced
2 cups chopped onions
3 tablespoons butter
12 ounces lasagna noodles, 18 noodles,cooked and drained
salt and pepper, to taste

Steps:

  • Beat the mashed potatoes with the Cheddar cheese and softened cream cheese.
  • Saute the bacon and onions in the butter.
  • Add 1/3 of the onion mixture to the potato mixture and add salt and pepper, if necessary.
  • Generously grease a 9"x13" casserole pan.
