Tips:

  • Use high-quality ingredients: The better the quality of your ingredients, the better your Reuben appetizers will taste. Use fresh, rye bread, thinly sliced corned beef, Swiss cheese that melts well, sauerkraut that is not too sour, and Thousand Island dressing that is flavorful but not overpowering.
  • Season the corned beef: Before cooking the corned beef, season it with salt, pepper, and garlic powder. This will help to enhance the flavor of the meat.
  • Cook the corned beef until it is tender: The corned beef should be cooked until it is tender but not dry. This will take about 1 hour per pound of meat.
  • Use a good quality sauerkraut: The sauerkraut should be tangy and flavorful, but not too sour. If you are using canned sauerkraut, be sure to rinse it well before using it.
  • Make your own Thousand Island dressing: Thousand Island dressing is easy to make at home and it tastes much better than the store-bought kind. Simply combine mayonnaise, ketchup, sweet pickle relish, chopped hard-boiled egg, and a pinch of salt and pepper.
  • Assemble the appetizers carefully: When assembling the appetizers, be sure to layer the ingredients in the correct order. Start with a slice of bread, then add the corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing. Top with another slice of bread and press down gently.
  • Grill the appetizers until they are golden brown: Grill the appetizers in a panini press or on a griddle until they are golden brown and the cheese is melted. Serve immediately.

Conclusion:

Cheesy Reuben appetizers are a delicious and easy-to-make snack or appetizer that are perfect for any occasion. They are made with simple ingredients that are easily accessible and can be customized to your own taste. With a little bit of planning, you can make these appetizers ahead of time and freeze them for later, making them a great option for busy weeknights or parties.
