1 tablespoon olive oil
1 tablespoon salt
1 (8 ounce) package processed cheese food (such as Velveeta®), cut into cubes
3 (5 ounce) cans chunk light tuna in water, drained
1 (15 ounce) can peas, drained

1 (10.75 ounce) can condensed cream of mushroom soup
1 teaspoon ground black pepper
1 cup grated Parmesan cheese

Steps:

Stir to coat noodles completely; pour into a large casserole dish. Sprinkle Parmesan cheese over the top of the noodle mixture to cover completely.
  • Bake in preheated oven until Parmesan cheese just begins to brown, 20 to 30 minutes.

CHEESY TUNA NOODLE CASSEROLE

This was a favorite in my home growing up and now it's a favorite of my family as well. I double the recipe these days for my husband and three children. For a change of pace I add canned chopped green chilies and 1/8 teaspoon cayenne, use pasta shells or spirals, or top the casserole with sliced American or cheddar cheese instead of breadcrumbs.

1 cup frozen peas
2 cans tuna, drained and flaked
2 cups hot cooked egg noodles
1/2 cup shredded cheddar cheese

Steps:

  • Stir the can soup, milk, peas, tuna and noodles in a half quart casserole pan. Bake at 400°F for 20 minutes or until the food is sizzling hot. Stir often during the baking process. Sprinkle the shredded cheddar cheese over the tuna mixture. Bake for an additional two minutes or until all the cheese melts.

Tips:

  • Use a variety of cheeses. This will give your casserole a more complex flavor. A good combination is cheddar, Parmesan, and mozzarella.
  • Don't overcook the noodles. They should be cooked al dente, or slightly firm to the bite.
  • Use a large casserole dish. This will ensure that the casserole cooks evenly and doesn't overflow.
  • Bake the casserole in a preheated oven. This will help it cook evenly.
  • Let the casserole cool for a few minutes before serving. This will help it set and make it easier to slice.
