  • In a heavy saucepan, combine the eggs and sugar. Gradually add 1-3/4 cups cream. Cook and stir over low heat until mixture reaches at least 160° and coats the back of a metal spoon. 1/2 teaspoon kosher salt
1 stick (8 tablespoons) cold unsalted butter, cut into 1/2-inch cubes

4 to 5 tablespoons ice-cold water
4 ounces cream cheese, softened
1 large egg, separated
3 tablespoons granulated sugar
1/4 teaspoon vanilla extract
12 ounces frozen sour cherries, thawed and well drained
1 tablespoon cornstarch
2 tablespoons Demerara sugar, for sprinkling

1 cup white sugar, divided
3 tablespoons lemon juice

1 cup milk
2 cups heavy cream
