Number Of Ingredients 4

1 pint pitted cherries
1/4 cup honey
1/2 tsp kosher salt
3/4 cup Dijon Mustard total (use a high quality French Dijon for best results)

Steps:

  • In a heavy bottomed pot, cook down cherries and honey over medium heat for approximately 20 minutes. Place cherries, honey, and natural cooking juices into a blender and blend until smooth. Pass blended cherries through a fine mesh strainer directly into a mixing bowl (or combine both those steps using a food mill.) Steps:

  • Seed Peppers if you like, I didn't. Finely Chop Peppers (I used a food processor to chop the peppers tiny) Example of Mixture of Peppers I used: Jalapeño, Banana Pepper (Sweet & Hot), Cherry Bombs,Cubanelle & Chili Peppers.
  • Mix mustards, vinegars, honey, coconut sugar, coconut oil, flour, water and kosher salt in the pan. Whisk mixture together well to dissolve the flour and then stir in the finely chopped peppers. Once combined place on the stove and stir frequently to avoid sticking to your pan. Once mixture comes to a boil continue to boil and stir for five minutes or until desired thickness.
  • Ladle into hot, sterilized jars. Cap with hot lid and of course the ring and process in a hot water bath for ten minutes.

Tips:

  • Use fresh ingredients: Fresh cherry peppers, honey, and mustard will give you the best flavor.
  • Choose the right type of honey: A mild-flavored honey, such as clover honey, will work best in this recipe.
  • Don't overcook the cherry peppers: Overcooking will make them tough and bitter.
  • Let the sauce cool completely before using: This will allow the flavors to meld together.
  • Store the sauce in a jar or container with a tight-fitting lid: It will keep in the refrigerator for up to 2 weeks.
