Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube or Bundt pan. Sprinkle nuts over the bottom of the pan.
  • Mix together the cake mix, 1/2 cup dark rum, eggs, 1/2 cup water, oil, and vanilla pudding mix. Pour batter over the nuts in the pan.
  • Bake for 1 hour. Cool, and invert cake on a serving plate. Prick the top of the cake.
  • To Make The Glaze: Melt the butter in a saucepan. Stir in 1/8 cup water and the 1/2 cup sugar. Boil for 5 minutes, stirring constantly. Remove glaze from heat, and stir in 1/4 cup rum. Drizzle and smooth evenly over the top and sides.

1 3/4 cups (245g) all-purpose flour
1/4 cup (35g) cornstarch
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup (170g) unsalted butter, at room temperature
1 1/3 cups (260g) granulated sugar (or 1/3 cup brown sugar plus 1 cup granulated sugar)
1/4 cup (60 ml) canola or vegetable oil
3 large eggs
1/2 cup (120 ml) heavy cream (or milk)
1/2 cup (120 ml) dark rum
2 teaspoon vanilla extract
1 stick (115g) unsalted butter
1/4 cup (60 ml) water
3/4 cup (150g) granulated sugar
1/4 cup (60 ml) dark rum

Steps:

  • Adjust oven rack to middle position and heat oven to 350°F/180°C. Grease well a 12-cup (10-inch) bundt pan and set aside.
  • To make the cake: In a medium bowl, whisk together flour, cornstarch, baking powder, and salt. Set aside.
  • In a standing mixer fitted with the paddle attachment, beat together butter, oil, and sugar for 5 minutes until light and fluffy. Occasionally scrape down the sides and bottom of the bowl. Add eggs, one at a time, beating well after each addition. Add heavy cream (or milk), rum, and vanilla, and beat until combined. On low speed, beat in the flour mixture and mix just until combined.
  • Scrape batter into prepared pan and smooth the top. Bake for 40-50 minutes or until a skewer inserted into the center of the cake comes out clean. If the top is browning too fast while baking, cover pan loosely with aluminum foil.
  • While the cake is in the oven, make the syrup: In a small saucepan, combine butter, water, and sugar. Cook on medium-low heat until sugar dissolves and syrup forms. Turn off heat and mix in rum. Set aside until the cake is ready.
  • When the cake is out of the oven pour about half of the syrup gently and slowly over the cake. Allow cake to cool for 10-15 minutes, then, run a knife gently around the edges of the cake, and remove cake from pan, carefully inverting it onto a plate. After inverting the cake, brush top and sides of the cake evenly with the rest of the syrup. Allow cake to cool to room temperature.
  • The cake is best served at room temperature. Store cake in an airtight container in the fridge for up to 5 days. Leftovers can be frozen for up to 2 months.

1 tablespoon active dry yeast
1/3 cup warm milk
1 cup all-purpose flour
2 eggs
5 tablespoons unsalted butter, softened, plus additional for buttering molds
Pinch salt
1 teaspoon sugar
Blood Orange Marmalade, recipe follows
1 cup whipped mascarpone, for garnish
1 cup sugar
3/4 cup water
1 teaspoon vanilla extract
1/4 cup dark rum
24 blood oranges
8 Meyer lemons
2 star anise
Water, measured according to weight of fruit, approximately 5 pints
2 vanilla beans, split and scraped
1 cinnamon stick
Sugar, measured according to weight of fruit, approximately 5 pounds

Steps:

  • In a large bowl, dissolve the yeast with the milk. Allow it to proof in a warm place for 10 minutes. Mix in the flour and eggs, beating well until dough is smooth. Cover the bowl, and let rise at room temperature for 45 minutes.
  • Preheat the oven to 350 degrees F. Brush 6 individual savarin molds or ramekins with butter.
  • Mix 5 tablespoons softened butter, the salt, and sugar into the dough, slapping it against the sides of the bowl. Fill molds almost full with the dough. Let the dough rise until molds are full. Bake for 20 to 25 minutes, until golden brown and a small knife or wooden skewer can be inserted in cake and removed cleanly.
  • To make the syrup: Combine the sugar and water in a saucepan over high heat. Bring to a boil, stirring to dissolve the sugar. Remove from heat and cool until lukewarm. Add the vanilla and rum.
  • Brush the cakes with the syrup, let it soak in, then brush again. Repeat until all the syrup is used or the cakes will absorb no more syrup. Place the soaked cakes on individual plates. Garnish with Blood Orange Marmalade and whipped mascarpone.
  • Slice the fruit very thin on a slicer or with a very sharp blade, removing all seeds as you go.
  • You should have approximately 2 1/2 pounds of fruit. For every pound of fruit add 2 pints of water in a large heavy bottomed pot. Add the vanilla beans and cinnamon. Bring to a boil and cook until the fruit skin is tender, approximately 10 minutes. Remove from heat, cool and refrigerate overnight.
  • Weigh the fruit and water mixture. You should have approximately 5 pounds. For each pound of fruit and water, add 1 pound of sugar. Bring to a boil and then continue to cook over medium heat, stirring frequently. To test, drip a small amount of the syrup onto a cool plate. When it's the consistency of honey at room temperature, it is ready (about 1 hour or more). Remove from heat and allow to cool. Leftover marmalade will keep in the refrigerator for several weeks.

5 ounces Jamaican White rum
5 ounces Jamaican Spiced Rum
5 ounces Port wine

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl, cream the butter and sugar till light and fluffy. Mix in the vanilla, lime juice, and lime zest. Add the eggs, 1 at a time, and incorporate well.
  • In a separate bowl, combine the bread crumbs, flour, all the spices, baking powder, and salt.
  • In another bowl, combine rum and port. Add flour mixture alternately with rum/port mixture into the batter.
  • Prepare a 9-inch cake or spring form pan by lining bottom and sides with parchment paper. Fill the pan 3/4 of the way and bake until a skewer comes out of the center of the cake clean, about an 1 hour and 10 minutes.
  • Put raisins, prunes, cinnamon sticks, and vanilla beans in a glass jar and cover with mixture of equal parts Jamaican white rum, Jamaican spiced rum, and Port. Cover with a tight fitting lid, label, and date the jar. Put in a cool, dry cupboard. From time to time, check the fruits to see if more liquor is needed, as the fruits will plump and soak up the liquid. Keep the fruit covered in liquor. It is best to allow the fruit to marinated for at least a month for best flavor.

1 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups sugar
1/2 cup vegetable shortening or 1/2 cup of softened butter
1 cup buttermilk
1 teaspoon vanilla
2 eggs, lightly beaten
3 ounces chocolate, melted
3 -6 ounces dark rum

Steps:

  • Mix flour, soda, salt and sugar into food processor.
  • Pulse with metal blade; set aside.
  • Cream shortening in mixer until soft.
  • Add sifted dry ingredients and 3/4 cups milk.
  • Mix till well blended.
  • Add vanilla, eggs, and melted chocolate, and remaining milk.
  • Beat 1 minute longer.
  • Pour into well greased and floured 2 9-inch layer pans.
  • Bake in 350 degreeee oven for 30 minutes.
  • Set on wire rack for 5 minutes then invert; poke holes with fork all over one side of cake and pour rum on both layers.

1 (3.5 ounce) package instant vanilla pudding mix
4 eggs
½ cup water
½ cup vegetable oil
½ cup rum
½ cup chopped pecans
3 tablespoons butter
¼ cup water
1 cup white sugar
½ cup rum

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch tube pan.
  • Combine cake mix and pudding mix.
  • In another bowl beat eggs, water, oil and rum until frothy. Add cake mix/pudding mixture and beat until well mixed. Spread pecans evenly over the bottom of the prepared pan and pour batter over pecans.
  • Bake cake at 325 degrees F (165 degrees C) for 60 minutes or until a toothpick comes out dry when inserted in the center. Allow to cool in pan for 5 minutes and remove from pan. Place in serving dish immediately, right side up. (Pecans should be on the bottom)
  • To Make Glaze: During the last 15 to 20 minutes of baking time, combine butter or margarine, water and sugar in a sauce pan and bring to boil over high heat. Reduce heat to medium and boil rapidly until it's very thick and syrupy stirring very frequently. The syrup must be reduced quite a bit and very thick otherwise it will make the cake mushy. Remove from heat and add rum. While cake is still hot, poke holes all over top of cake with a toothpick and spoon glaze over top of cake. Allow cake to sit at room temperature for one day then refrigerate.

½ cup canola oil
½ cup milk, room temperature
4 large eggs, room temperature
½ cup rum
2 teaspoons vanilla extract
¼ cup key lime juice
1 key lime zest
8 tablespoons unsalted butter
1 cup granulated sugar

½ cup rum

Steps:

  • Preheat the oven to 325°F (170°C). Grease a 10-12-cup bundt pan with nonstick spray. Dust the inside of the pan with flour and turn the pan to coat evenly, then shake out any excess.
  • Make the rum cake: In a large bowl, mix together the flour, sugar, pudding mix, baking powder, salt, butter, and canola oil with an electric hand mixer on medium speed until mixture is well incorporated and looks sandy.

Steps:

  • Drain black cherries - drain the juice into a bowl and store for later. Pour a bit of dark rum over cherries, cover them and let them rest until the sponge is ready.
  • Mix the eggs with sugar until foam is formed - you can use mixer for this. Add cocoa, flour, baking powder and oil.
  • Cover your tin with a non stick baking paper and then pour the mixture into the tin, alternatively you can grease the tin and sprinkle it with breadcrumbs to avoid burning the pastry.
  • Heat the oven to 200 C. It takes around 20mins to bake the sponge, but keep checking it frequently by sticking a tooth pick into the mixture.
  • Once sponge is ready, let it cool down.
  • Mix the juice from the tinned cherries with 2 table spoons of corn flour, 1/4 tea spoon of cinammon and vanilla sugar and cook until thick. Take off heat and add the rum-soaked cherries. Leave a few cherries for decoration. Let the filling cool down.
  • Once the sponge has cooled down, cut it either into two or three layers, depending on the diameter of your tin. Spread the cooled cherry filling and some of the whipped cream onto the sponge.
  • Spread whipped cream over the cake to cover it completely, then sprinkle it with grated chocolate.
  • Decorate top of the cake with rest of the whipped cream and rest of the cherries, alternatively you can also use glazed cherries for decoration.
