CHICKEN, MUSHROOM & WILD RICE CASSEROLE

Chicken, Mushroom & Wild Rice Casserole image

In Minnesota, chicken, mushrooms and wild rice are often bound together in a casserole with cream of mushroom soup. We forgo the sodium-rich canned soup and make a light, creamy sauce that gets depth of flavor from dry sherry and Parmesan cheese. If you already have cooked chicken, use 4 cups and skip Step 2.

Time 1h45m

Number Of Ingredients 16

2 cups water
½ cup wild rice
2 pounds boneless, skinless chicken breasts, trimmed
2 tablespoons extra-virgin olive oil
2 leeks, chopped and rinsed
1 ½ pounds mushrooms, sliced
1 cup dry sherry (see Note)
¼ cup all-purpose flour
2 cups low-fat milk
½ cup grated Parmesan cheese
½ cup reduced-fat sour cream
⅓ cup chopped flat-leaf parsley
1 teaspoon salt
½ teaspoon freshly ground pepper
2 cups frozen French-cut green beans
½ cup sliced almonds

Steps:

  • Combine water and rice in a small heavy saucepan; bring to a boil. Cover, reduce heat to maintain a simmer, and cook until tender, 35 to 40 minutes. Drain.
  • Meanwhile, place chicken in a large skillet or saucepan. Add lightly salted water to cover and bring to a boil. Cover, reduce heat and simmer gently until the chicken is cooked through and no longer pink in the middle, 10 to 15 minutes. Transfer to a clean cutting board and let cool.
  • Heat oil in a Dutch oven or large high-sided skillet over medium heat. Add leeks and cook, stirring occasionally, until just starting to brown, 4 to 5 minutes. Add mushrooms and cook, stirring occasionally, until their liquid has been released and has evaporated, 12 to 14 minutes. Add sherry, increase heat to high and cook until most of the liquid has evaporated, 5 to 7 minutes. Sprinkle the vegetables with flour and stir to coat. Add milk; bring to a simmer and cook for 1 minute, stirring. Stir in Parmesan, sour cream, parsley, salt and pepper. Remove from the heat.
  • Preheat oven to 350 degrees F. Coat a 9-by-13-inch (or similar 3-quart) baking dish with cooking spray.
  • Cut the chicken into bite-size pieces. Spread the rice in an even layer in the prepared baking dish. Top with the chicken, then green beans. Pour the sauce over the top and spread evenly. Sprinkle with almonds.
  • Bake the casserole until it is bubbling and the almonds are golden brown, about 30 minutes. Let stand for 10 minutes before serving.

CHICKEN, MUSHROOM AND WILD RICE CASSEROLE

Chicken, Mushroom and Wild Rice Casserole image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 2h35m

Yield 4 servings

Number Of Ingredients 17

5 cups chicken broth
4 tablespoons unsalted butter
2 large shallots, finely diced
10 ounces cremini mushrooms, bottoms of stems trimmed, and quartered
1 clove garlic, minced
1/2 cup dry sherry
One 8-ounce bag uncooked cultivated wild rice, washed and drained
6 large sprigs fresh thyme, tied into a bundle, plus more for garnish if desired
1 bay leaf
2 teaspoons ground coriander
2 teaspoons kosher salt, plus more to taste
2 teaspoons freshly ground black pepper, plus more to taste
4 small to medium (6 1/2 to 7 1/2 ounces each) boneless, skinless chicken breasts
1 tablespoon extra-virgin olive oil
1/2 cup dried cranberries
1 small lemon, sliced into 1/4-inch-thick slices
1 tablespoon chopped fresh parsley, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the broth in a medium saucepan until simmering.
  • Melt the butter in an oven-safe braiser (or large cast-iron skillet with a lid or 4-quart saute pan with a lid) over medium-high heat. Add the shallots and mushrooms, tossing to coat in the butter, and cook, stirring once or twice, until golden, about 5 minutes. Stir in the garlic and cook until fragrant, 1 to 2 minutes. Add the sherry, allowing the pan to deglaze. Add the rice and allow it to toast and soak in the flavors of the pan. Add about 4 cups of the hot broth to the pan. Add the thyme and bay leaf. Cover the braiser and place it in the oven to bake until the rice is almost cooked, 1 hour to 1 hour and 15 minutes.
  • Meanwhile, in a small bowl, mix together the coriander, salt and pepper. Brush the chicken with the olive oil, then dust all over with the seasoning. Set aside.
  • Fluff the rice with a fork and check on doneness. It should still have some chew with some grains just starting to pop open. Stir in the cranberries. Add the remaining hot broth to keep the dish brothy. Add the chicken breasts to the braiser, laying them at an angle so that most of the chicken is submerged in the rice. Shingle the lemon slices in between the chicken breasts. Cover and bake for 20 to 25 minutes. Uncover and continue to cook until the chicken registers an internal temperature of 165 degrees F, about another 10 minutes. Top with the parsley or thyme before serving.

CHICKEN BREASTS WITH ROSEMARY AND CHANTERELLES AND ROASTED GARLIC POTATOES

Chicken Breasts with Rosemary and Chanterelles and Roasted Garlic Potatoes image

Provided by Food Network

Categories     main-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 19

1 1/4 pounds small Red Bliss Potatoes, well scrubbed
2 heads garlic, separated into unpeeled cloves
1/4 cup olive oil
Coarse salt and freshly ground black pepper
2 tablespoons unsalted butter
1 shallot, minced
2 cloves garlic, peeled and minced
1 pound fresh chanterelle mushrooms, trimmed, cleaned, and cut if large
2 sprigs fresh thyme, leaves picked and chopped
2 cups chicken stock
2 teaspoons canola oil
1/4 cup unsalted butter
4 boneless chicken breast halves, skin on
Coarse salt and freshly ground white pepper to taste
1 sprig rosemary, about 6 inches long, coarsely chopped
1/4 cup dry white wine
2 tablespoons Cognac
1 1/2 cups white chicken stock
1/4 cup finely minced fresh chives

Steps:

  • To make potatoes: Preheat oven to 375 degrees. Place a roasting pan in the oven for 5 minutes to preheat. In a mixing bowl, combine the potatoes, garlic, and olive oil and stir to coat the potatoes and garlic. Season generously with salt and pepper. Transfer to the roasting pan and roast, stirring occasionally until potatoes are soft when pierced with the tip of a knife and the garlic cloves are very soft and sweet in flavor, about 40 minutes. Remove from oven and keep warm.
  • To make mushrooms: In a 12-inch saute pan, heat the butter over medium heat. Add the shallots and cook for about 3 minutes, until softened. Add the garlic and cook about 1 minute longer. Add the mushrooms and thyme. Cover the pan and cook for 7 to 10 minutes, until the mushrooms are tender and have released their juices. If the mushrooms seem dry during cooking, add about 1/4 cup of the chicken stock.
  • When the mushrooms are soft, add the rest of the chicken stock, raise the heat to high, and cook until the liquid is reduced by half, about 6 minutes. There will be quite a bit of liquid in the mushrooms. Remove them from the heat, cover, and set side to keep warm.
  • To make the chicken:
  • Heat the oil and 1 tablespoon of the butter in a 12-inch saute pan over medium-high heat. Season the chicken breasts with salt and pepper. Place the chicken breasts in the pan, skin side down. Cook for about 6 minutes, until golden brown. Turn and cook until the juices run clear when pierced with the tip of a knife, about 6 more minutes. Add the rosemary and cook, basting frequently, for 6 to 8 minutes longer, until the chicken is cooked through and nicely browned. Transfer to a serving platter and set it aside, covered, to keep warm.
  • Pour off any oil in the pan and add the wine and Cognac. Raise the heat to high and deglaze the pan by scraping up any browned bits with a wooden spoon. Add the stock and cook until the sauce is reduced nearly by half or thickened and richly flavored, about 4 minutes. Remove the pan from the heat and swirl in the remaining 3 tablespoons of butter. Season with the chives, salt, and pepper. Spoon the sauce over the chicken and serve, passing the mushrooms and potatoes on the side.

CHICKEN POT PIE WITH CHANTERELLE MUSHROOMS

Chicken Pot Pie with Chanterelle Mushrooms image

A reasonably easy to make, and tasty, chicken pot pie with chanterelle mushrooms that I serve to my young family.

Provided by Pete

Time 1h10m

Yield 6

Number Of Ingredients 16

1 bunch fresh parsley
1 tablespoon olive oil
2 (5 ounce) skinless, boneless chicken breast halves
1 pound chanterelle mushrooms, coarsely chopped
1 clove garlic, minced
6 medium carrots, diced
1 (15 ounce) can peas, drained
1 (14.5 ounce) can chicken broth
¼ cup milk
3 sprigs fresh thyme, chopped
3 sprigs fresh rosemary, chopped
3 teaspoons cornstarch
3 teaspoons water
salt and ground black pepper to taste
1 sheet frozen puff pastry, thawed
1 large egg yolk, beaten

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a pie dish. Separate parsley leaves and stalks. Chop both and set aside.

Return the chicken to pan, add mushrooms and garlic, and cook and stir until soft, about 5 minutes. Strain off and save the juices from the mushrooms as they cook.
  • Transfer pan contents to the prepared pie dish along with carrots and peas; add parsley leaves. Mix to get a good distribution of ingredients throughout the dish.
  • Combine chicken broth, reserved mushroom juices, milk, parsley stalks, thyme, and rosemary in a pot. Bring to a boil. Mix cornstarch and water together to make a paste and add to the pot. Reduce heat and simmer, stirring occasionally, for 5 minutes. Strain the gravy over the pie dish and season with salt and pepper.
  • Roll out the thawed pastry until it will cover the pie dish. Lay over pie and press down at the sides, cutting away excess pastry. Brush beaten egg yolk over the pastry. Cut a small "X" in the middle of the pie to vent.
  • Bake in the preheated oven until browned and bubbly, about 30 minutes.

WILD RICE WITH WILD MUSHROOMS

Wild Rice with Wild Mushrooms image

One surprise to Europeans who settled the plains was the abundance of wild mushrooms, including morels, chanterelles, and other varieties familiar from home. Free for the picking, the mushrooms were hung on strings and dried, providing a winter's worth of eating. Wild rice (actually a grass seed) is a New World native that combines well with the earthy mushrooms the French cèpes.

3 cups mix porcini mushrooms

4 cups broth, and or 4 cups water
1 tablespoon oregano
3 minced fresh garlic cloves
1/4 teaspoon salt

Steps:

  • In a large sauce pan simmer the the rice in broth with the garlic and chopped mushrooms stirring occasionally, until the both is all absorbed and the rice is cooked. About 20 minutes. Add oregano and salt 3/4 of the way through the cooking or at the end.

CHICKEN BREASTS WITH CHANTERELLE MUSHROOMS AND WILD RICE RECIPE

Chicken Breasts With Chanterelle Mushrooms And Wild Rice Recipe image

Provided by á-170456

Number Of Ingredients 9

2 sprigs parsley
1 shallot
2 tablespoons wild rice
2 chicken breasts
1/4 pound chanterelle mushrooms*
2 tablespoons butter
Salt to taste
Freshly-ground black pepper to taste
2 tablespoons olive oil

Steps:

  • * If fresh chanterelle mushrooms are unavailable, you can replace them with dried or canned gourmet "forest" mushrooms. Wash, drain, and chop the parsley. Peel and chop the shallot. Cook the wild rice according to the directions on the packet and drain. Using a sharp knife, cut pockets in the chicken breasts and set aside. (See Note) Wipe the mushrooms and gently sauté with the shallots in the butter in a frying pan for 3 minutes. Stir into the cooked rice, add the chopped parsley, and season with salt and pepper. Fill the pockets you have made in the chicken breasts with this mixture, and secure them with a toothpick. Heat the olive oil in a frying pan, and cook the chicken breasts, covered, for about 7 minutes on each side. Serve with a green salad. This recipe yields 2 servings. Note: Lay the chicken breasts on a cutting board and slice almost in half to make a pocket as when you slice a roll for a sandwich. Do not cut completely through (you will be stuffing the inside of the breast like a sandwich).

Tips:

  • For the best flavor, use fresh chanterelle mushrooms. If you can't find fresh chanterelles, you can use dried chanterelles, but be sure to soak them in hot water for 30 minutes before using.
  • Don't overcrowd the pan when cooking the chicken breasts. If you do, the chicken will steam instead of brown.
  • Cook the chicken breasts over medium-high heat for 3-4 minutes per side, or until they are cooked through. If you're not sure if the chicken is cooked through, insert a meat thermometer into the thickest part of the breast. The chicken is done when the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken breasts rest for 5 minutes before slicing and serving. This will help the juices redistribute and make the chicken more tender.
  • Serve the chicken breasts with the chanterelle mushrooms, wild rice, and a simple green salad.

Conclusion:

This recipe for Chicken Breasts with Chanterelle Mushrooms and Wild Rice is a delicious and easy-to-make dish that's perfect for a weeknight meal. The chicken is tender and juicy, the mushrooms are earthy and flavorful, and the wild rice adds a nutty flavor and chewy texture. This dish is sure to please everyone at your table.
