2 tablespoons fish sauce
1 teaspoon sugar

  • Remove smashed Lemongrass.
  • Add the coconut milk and simmer, stirring, until sauce it thickened.
  • Serve over Asian noodles or steamed white rice.
  • Garnish with sprinkled chopped nuts and the freshly chopped cilantro.

Tips:

  • Choose the right lemongrass: Look for lemongrass stalks that are plump and have a strong citrusy aroma. Avoid stalks that are dry or have brown spots.
  • Prep the lemongrass properly: To release the full flavor of the lemongrass, bruise the stalks with the back of a knife or a meat mallet before using them.
  • Don't overcrowd the pan: When searing the chicken, make sure to do it in batches so that the chicken doesn't steam and become soggy.
  • Cook the chicken until it's cooked through: To ensure that the chicken is cooked through, use a meat thermometer to check that the internal temperature has reached 165°F (74°C).
  • Don't overcook the sauce: The lemongrass sauce should be cooked just until it thickens and becomes flavorful. Overcooking the sauce will make it bitter.
  • Serve with your favorite sides: Chicken in lemongrass sauce can be served with a variety of sides, such as rice, noodles, or vegetables.
