6 -8 cut-up chicken pieces (skin on or off)
seasoning salt and black pepper (or use white salt)
4 tablespoons butter or 4 tablespoons margarine
2 tablespoons oil
1 green bell pepper, seeded and chopped (optional)
1 large onion, chopped
2 tablespoons fresh minced garlic (or to taste)
black pepper (or use cayenne)
2 teaspoons paprika
1/2 teaspoon ground ginger
2 teaspoons chili powder (or to taste)
1 (16 ounce) can whole tomatoes
2 (4 ounce) cans sliced mushrooms, drained
1/2 cup heavy whipping cream (optional)

Steps:

  • Rinse and dry the chicken parts.
  • Season the chicken with salt and pepper on both sides.
  • In a skillet heat the butter with oil. Brown the chicken quickly on both sides, (if you are starting your crockpot in the morning, chop onion and brown your chicken the night before, and leave in the fridge until the morning, warm in the microwave for 5 minutes before adding to the crockpot to start the cooking process).
  • Place the chicken pieces in the crockpot, then sprinkle the bell pepper (if using) over the chicken.
  • In a large bowl, stir together all the remaining ingredients (except the heavy cream); pour into the crockpot over the chicken pieces.
  • Cover, and cook on LOW for 8-10 hours, or on HIGH for 4-5 hours.
  • Just before serving, stir in the heavy cream (if using).

1/4 cup butter
4 large chicken breasts, halved
1 large onion, chopped
1 clove garlic, minced
1 1/2 teaspoons salt
1 1/2 teaspoons paprika
1 teaspoon ginger
1/4 teaspoon chili powder
1 cup canned tomato
1 cup chicken broth
1 can sliced mushrooms or 1/2 cup fresh sliced mushroom
1 tablespoon cornstarch
1 cup heavy cream

Steps:

  • Brown chicken with onions and garlic.
  • Add seasonings, tomatoes, broth and mushrooms.
  • Simmer covered for 40 minutes or until chicken is tender.
  • Remove chicken from sauce and keep warm.
  • Blend corn starch with cream to make a smooth past and stir into sauce.
  • Stir in remaining cream and simmer gently for 5 minute stirring constantly.
  • Pour sauce over chicken.
  • Served with hot noodles or rice.

6-8 lean pork chops (1 inch thick)
1/2 c flour
1 Tbsp salt
1 1/2 tsp dry mustard
1/2 tsp garlic powder
2 Tbsp oil
2 can(s) chicken and rice soup

  • 1. Dredge chops in mixture of flour, salt, mustard, and garlic powder. Brown in oil in large skillet.
  • 2. Place browned chops in crock pot. Pour soup over all. Cover and cook on LOW 6-8 hours (or HIGH for 3 1/2 hours). May use thinner chops; cooking time shorter.
  • 3. Try skinless, boneless chicken breasts instead of pork chops!
