- Mix salt, paprika, cayenne pepper, onion powder, thyme, white pepper, garlic powder, and black pepper together in a small bowl.
- Rub seasoning mixture over the entire chicken to evenly season. Put rubbed chicken into a large resealable plastic bag; refrigerate 8 hours to overnight.
- Remove chicken from bag and cook in slow cooker on Low until no longer pink at the bone and the juices run clear, 4 to 8 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).

CROCK POT SUPER GARLIC CHICKEN LEGS
I love garlic, and I love chicken cooked in the crock pot (so tender it falls right off of the bones), so this is a perfect combo of the two. I have some cooking in the crock pot right now, and I am longing for it to be done! :-) I never measure the spices, so these are estimates - please feel free to experiment. It is cooked with loads of garlic, so loving garlic is a plus!

- Place garlic cloves in crock pot.
- Mix spices together in med bowl.
- Pour oil into separate med bowl.
- Dip chicken legs in oil, then roll around in spice bowl, until chicken is nicely coated in spices.

- Pour chicken broth over all ingredients.
- Cook on Low for 8 hours.

- Rinse and dry the chicken parts.
- Season the chicken with salt and pepper on both sides.
- In a skillet heat the butter with oil. Brown the chicken quickly on both sides, (if you are starting your crockpot in the morning, chop onion and brown your chicken the night before, and leave in the fridge until the morning, warm in the microwave for 5 minutes before adding to the crockpot to start the cooking process).
- Place the chicken pieces in the crockpot, then sprinkle the bell pepper (if using) over the chicken.
- In a large bowl, stir together all the remaining ingredients (except the heavy cream); pour into the crockpot over the chicken pieces.
- Cover, and cook on LOW for 8-10 hours, or on HIGH for 4-5 hours.
- Just before serving, stir in the heavy cream (if using).

Steps:
- Brown chicken with onions and garlic.
- Add seasonings, tomatoes, broth and mushrooms.
- Simmer covered for 40 minutes or until chicken is tender.
