LIVER DUMPLINGS

Liver Dumplings image

This was my dad's way of making sure we got our weekly dose of liver. It's one of those 'by guess and by golly' recipes that he never wrote down. Most of the time he added it to soup, but once in a while he ladled it over noodles and fried onions.

Time 15m

Yield 4 Cups

Number Of Ingredients 7

1/4 lb liver sausage
1 egg whites or 1 egg yolk
1/2 cup cracker crumb
1 tablespoon chopped parsley or 1 tablespoon chives
1 tablespoon catsup (optional)
3 cups beef stock
1/2 teaspoon parsley

Steps:

  • Shape mixture into 1 inch meatballs.
  • Drop into gently simmering stock.
  • Simmer 5-6 minutes.
  • Add parsley for garnish.

Tips:

  • For the perfect dumpling texture, use fresh bread cubes that are not too soft or too hard. Stale bread can result in a dense dumpling.
  • Season the dumpling mixture liberally with salt, pepper, and herbs. This will ensure that the dumplings are flavorful throughout.
  • When forming the dumplings, be gentle and do not overwork the mixture. Overworking the mixture will result in tough dumplings.
  • To prevent the dumplings from sticking to the bottom of the pot, bring the broth to a simmer before adding them. Once added, gently stir the dumplings to ensure they are evenly distributed.
  • Cook the dumplings until they are cooked through, but not overcooked. Overcooked dumplings will become tough and rubbery.
  • Serve the soup immediately, garnished with fresh parsley or chives.
