CHICKEN "SHIRATAKI TOFU NOODLE" SOUP WITH RUTABAGA

Chicken

Nutritional Information: 135 calories, 1g fat, 15g carbohydrate, 17g protein. I used a soup recipe from a "Taste of Home" publication, and adapted it to use the tofu noodles. Don't be afraid of the tofu noodle...you won't notice the difference! They are made by House Foods America Corporation. Check out their website on where to get this awesome, versatile, low carb product. (www.house-foods.com) I like to eat this with a grilled cheese sandwich for a warm and comforting lunch. Just a note- DO NOT FREEZE this soup. The noodles do not freeze well.

Tips:

  • Use fresh vegetables: Fresh vegetables will give your soup the best flavor. If you can, buy them from a local farmer's market or organic grocery store.
  • Don't overcook the vegetables: Overcooked vegetables will become mushy and lose their flavor. Cook them just until they are tender-crisp.
  • Use a good quality chicken broth: The chicken broth is the base of your soup, so it's important to use a good quality broth. Look for a broth that is low in sodium and has a rich, flavorful taste.
  • Add some herbs and spices: Herbs and spices can add a lot of flavor to your soup. Some good options include thyme, rosemary, sage, garlic, and pepper.
  • Don't be afraid to experiment: There are many different ways to make chicken noodle soup. Feel free to experiment with different ingredients and flavors to find a soup that you love.

Conclusion:

Chicken noodle soup is a classic comfort food that is perfect for a cold day or when you're feeling under the weather. It's also a great way to use up leftover chicken. With a few simple ingredients and a little bit of time, you can make a delicious and nutritious chicken noodle soup that the whole family will enjoy.
