4 skinless, boneless chicken breasts
¼ cup butter
salt and pepper to taste
4 slices mozzarella cheese
1 egg, beaten
2 cups all-purpose flour for coating
1 cup seasoned dry bread crumbs
¼ cup butter
2 teaspoons minced garlic
1 cup dry white wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts between 2 sheets of wax paper. Pound each to 1/4 inch thickness. Spread butter/margarine over the inside, then add salt and pepper to taste.
  • Place slice of cheese on breast, roll and close with toothpicks. Repeat with each breast. Dip rolled breasts in flour, then egg, then breadcrumbs. Place coated breasts in a lightly greased 9x13 inch baking dish.
  • To Make Sauce: In a saucepan, melt 1/4 cup butter and add garlic. Add wine and simmer all together. Pour sauce over chicken and bake in the preheated oven for 30 to 45 minutes.

1 cup spaghetti sauce
3/4 cup shredded part-skim mozzarella cheese

Steps:

  • In a large resealable plastic bag, combine the baking mix, Parmesan cheese, Italian seasoning, paprika and pepper. Add chicken, a few pieces at a time, and shake to coat. , Place in a greased shallow baking dish. Bake, uncovered, at 400° for 10 minutes on each side. Pour sauce over chicken. 3 pieces chicken breasts, cut in cubes
2 teaspoons extra virgin olive oil
1 tablespoon butter
1 medium onion, chopped
1 -2 garlic clove, minced
5 mixed mushrooms, brushed and thickly sliced
1 red bell pepper, cut in cubes (calls for cubanelle pepper)
2 tomatoes, peeled, cut in cubes
salt
pepper
1 teaspoon oregano
1/4 cup mozzarella cheese (or kasar cheese)
1/2 teaspoon turkish red pepper powder (or to taste)

Steps:

  • In a medium sized pan, saute the onion with butter and olive oil. Add the garlic and when the smell of the garlic comes out, add the chicken. Cook the chicken until the colour changes. Add the mushrooms, tomatoes, cubanelle pepper (red bell pepper), salt and pepper. Simmer for about 15 minutes with the lid covered. Turn the heat off and sprinkle some oregano all over.
  • Transfer to the oven proof dish. Sprinkle the shredded cheese and red pepper on top. Preheat the oven to 400 F (200 C) and bake until the cheese melts. Serve with Turkish Pilaf.

1 (6 ounce) can tomato paste
1 tablespoon white sugar
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1 medium garlic clove, chopped
3 pounds skinless, boneless chicken breast halves
1 cup fine dry bread crumbs
1 pound Cheddar cheese, shredded
1 pound mozzarella cheese, shredded
1 teaspoon garlic salt to taste
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish that is deep enough to allow at least one inch between the chicken and the top of the dish.
  • In a large pot over medium heat, stir together tomato sauce, tomato paste, sugar, parsley, basil, oregano, and garlic.
  • Meanwhile, in a large bowl, toss chicken with bread crumbs until completely covered. Arrange chicken in baking dish and sprinkle to taste with garlic salt and pepper to taste.
