- Preheat an oven to 400 degrees F (200 degrees C).
- Place the butter and onion in a 9x13 inch baking dish, and bake in the preheated oven, stirring occasionally, until the onion is translucent, about 15 minutes. - in a ziplock bag, toss chicken with flour and coat well, reserve remaining flour.
- in a large nonstick skillet heat half of the olive oil over med-high heat. brown chicken, for about 10 minutes. transfer chicken to plate, pour off fat in pan.
