I couldn't find a slow cooker recipe for chicken that was quite right at the time, so I made one up, and it has been a hit! Browning the chicken first avoids the strange pale chicken common to slow cooked chickens.

2 tablespoons olive oil
1 (3 pound) whole chicken
salt and pepper to taste
2 lemons
1 onion, coarsely chopped
1 teaspoon dried thyme
½ cup dry white wine
1 teaspoon crushed garlic

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then fry in the hot oil until browned on all sides.
  • Meanwhile, chop one of the lemons into chunks and place into a slow cooker along with the onion, thyme, white wine and garlic. Cut the remaining lemon into quarters and stuff into the cavity of the chicken. Place the chicken into the slow cooker breast side down on top of the onion and lemon mixture. Cover and cook on Low for 6 hours, or for 3 hours on High. Chicken is done when the legs move easily in their sockets and the internal temperature of the breast has reached 160 degrees F (70 degrees C).

6 cloves, minced
1 1/2 teaspoons dried thyme
3 -4 lbs whole skinless chicken breasts, with bone
1/4 cup orange juice
1 tablespoon balsamic vinegar

Steps:

  • Sprinkle garlic and thyme over chicken. Place chicken in crock pot.
  • Pour orange juice and vinegar over chicken.
  • Cover and cook on low 5 hours, high 2 1/2 hours.
  • Remove chicken from crock pot and put on a platter.
  • Skim off fat from cooking juices.
  • Strain juice in saucepan, bring to boil, reduce heat to simmer and reduce juice to 1 cup.
  • Serve in a bowl with spoon for chicken and serve.

4 boneless skinless chicken breasts
1 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 small onion, chopped
6 -8 sprigs fresh thyme
1/2 cup dry white wine, divided
1 cup 35% real whipping cream
1 tablespoon liquid honey

Steps:

  • Place chopped onion and half of the wine into the bottom of the crock-pot. Add chicken, with half of the salt and half of the pepper, and the thyme sprigs. Add half of of the wine. Cover and cook on low setting 5-6 hours or until chicken is tender. Remove chicken to warm plate. Combine remaining ingredients in crock-pot, simmer on high setting about 5 minutes. Return chicken to crock-pot, lower cook setting to low and heat for about 15 minutes. Serve.

2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
¼ cup water
3 tablespoons fresh lemon juice

1 teaspoon chicken bouillon granules
1 teaspoon chopped fresh parsley

Steps:

  • In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.

4 boneless skinless chicken breast halves (6 ounces each)

2/3 cup chicken broth
4 green onions, chopped
1 tablespoon jarred roasted minced garlic
