1 cup chickpea flour
10 Tbsp. extra-virgin olive oil, divided, plus more for serving
1 1/2 tsp. kosher salt, divided
2 pints cherry tomatoes, halved if large
2 garlic cloves, finely chopped
1 (15-oz.) can chickpeas, drained, rinsed
1 Tbsp. dried oregano
1 tsp. sherry or red wine vinegar
1/4 tsp. smoked paprika (optional)
2 Tbsp. cold unsalted butter, cut into pieces
1 cup coarsely crumbled feta (about 5 oz.)
Baby greens, such as arugula, kale, or spinach, and lemon wedges (for serving)

Steps:

  • Place a rack in top third of oven; preheat to 450°F. Whisk chickpea flour, 2 Tbsp. oil, 1 tsp. salt, and 1 cup water in a medium bowl or large measuring cup until combined. Let sit at least 10 minutes and up to 1 hour to let flour hydrate.
  • Heat 2 Tbsp. oil in a 12" cast-iron skillet over high until shimmering. Pour in exactly half (3/4 cup) of the chickpea batter and tilt to evenly coat skillet. Transfer to oven and bake flatbread until edges are golden brown, 8-10 minutes. Using a large spatula, transfer flatbread to a wire rack. Repeat with remaining batter.
  • Meanwhile, cook tomatoes, garlic, 1/4 cup oil, and remaining 1/2 tsp. salt in a large skillet over medium-high heat, stirring occasionally, until tomatoes begin to burst, 4-5 minutes. 1 basic bread recipe
1 tablespoon cumin seeds, lightly cracked
2 tablespoon coriander seeds, lightly cracked
1 can chickpeas, drained and mashed

Steps:

  • At Stage 2 of the basic recipe, mix in the cumin seeds, coriander seeds and chickpeas and carry on through the recipe as normal until Stage 5, when you should divide your batch of dough into 10 pieces. Roll out each of these to 1/4-inch thick and gently pull out into a slightly irregular oval shape. Cook 1 or 2 at a time, depending on how big your oven is, straight away without second proof, directly on the bars of the preheated oven at 450 degrees F. 2 tablespoons peanut oil or 2 tablespoons safflower oil
1 tablespoon cumin seed (or 2 teaspoons of cumin powder)
1 tablespoon chopped fresh ginger
1/4 teaspoon crushed red pepper flakes
1 large onion, halved and sliced into half moons
15 -20 ounces canned crushed tomatoes (or diced tomatoes)
salt and black pepper (oops i forgot the pepper)
30 ounces canned chick-peas, drained and rinsed
chopped cilantro (optional garnish)

Steps:

  • Heat the oil in a large saucepan over medium heat. Add cumin seeds and cook for 1 minute, or just add powder. Stir in the ginger, crushed red pepper, and onions. Cook until onions are soft, about 5ish minutes.
  • Add tomatoes and cook for 5 more minutes, until nice and saucy. Season with salt and pepper.
