This pie is a little different there is no crust the binding is the corn pureed. It has a little bit of a kick to it but very good a flavorful.

1 tablespoon olive oil
1 large onion (chopped )
1 large dried crushed aji panca chile (or new mexican )
1/2 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon oregano
10 large black olives (sliced )
2 cups corn
1 tablespoon milk
1 teaspoon sugar
1 tablespoon olive oil

Steps:

  • In heavy skillet, brown the meat drain off the fat and remove.
  • to a 3 - 4 quart casserole dish and set aside.
  • Add oil to the skillet and saute onion, chile, cumin, paprika, salt, pepper and oregano.
  • Add the sauteed mixture to the meat and mix.
  • Arrange the olives over the top.
  • Put corn, milk, and sugar in blender and puree.
  • Heat a bit of oil in a skillet, add pureed corn and simmer until the corn mixture starts to thicken.
  • Pour this mixture over the meat mixture.
  • Bake in 350 degree oven for 45 to 60 minutes or until top is brown.
  • Remove from oven and let sit for 10 minutes before serving.

The meat filling is a harmonious mix of beef, raisins, and olives that will make your tongue tingle when you take your first bite. And don't be surprised when you've eaten more of the pie than you had planned.

¼ cup vegetable oil
2 onions, chopped
1 pound ground beef
1 tablespoon paprika
1 ½ teaspoons white sugar
1 cube beef bouillon
½ cup hot water
1 teaspoon dried oregano
salt and ground black pepper to taste
1 cup black olives
½ cup raisins
2 cups all-purpose flour
1 teaspoon salt
1 pinch white sugar
⅔ cup shortening (such as Crisco®)
6 tablespoons cold water, or as needed
3 eggs, beaten

Steps:

  • Heat oil in a skillet over medium heat; fry onions until transparent, about 5 minutes. Add ground beef, paprika, and 1 1/2 teaspoons sugar. Cook and stir until beef is browned, about 5 minutes more.
  • Dissolve bouillon cube in hot water; stir into beef mixture. Add oregano, salt, and pepper. Simmer over low heat until flavors combine, 5 to 10 minutes. Stir in olives and raisins; remove from heat and let cool.

5.5 ounces all-purpose flour
1/2 tablespoon salt
4.5 ounces cold water
1 tablespoon vegetable oil
2 pounds ground pork
1 onion, minced
3/4 cup grated potato
Salt
Pepper
Allspice
1 egg
3 tablespoons milk

Steps:

  • Preheat the oven to 400 degrees F.
  • Pie Crust: Mix flour and shortening. Add salt and cold water. Add all the cold water at once and mix delicately. Form a ball and refrigerate for 2 hours.
  • Once dough is chilled, flour your worktop. Divide dough in half. Roll out 2 pie crusts. One should be slightly larger than the other, this will be your bottom crust.
  • Meat Filling: Heat the oil in a large pot. Add the pork and onion and cook over medium-low heat for 45 minutes, stirring often. When pork is cooked remove fat from pan. Add grated potato, salt, pepper, and allspice, to taste. Stir well, and let mixture rest for 20 minutes.
  • Preheat the oven to 400 degrees F. Butter the bottom of 9-inch pie plate. Place the bottom crust in the pie plate and poke several holes in the crust with a fork. Make sure an ample amount of crust spills over the edges of the pie plate. Fill the crust with the meat mixture. Level with a spatula. Wet edges of bottom crust and place top crust over meat mixture. Press top crust onto meat mixture to eliminate any air holes. Beat together the egg and the milk to make an egg wash. Pinch the crust edges together and brush the top crust with the egg wash.
  • Bake for 10 minutes. Reduce heat to 350 degrees F and continue baking for 15 minutes or until crust is golden brown.
  • Slice and serve hot or cold.

Steps:

  • Drain corn, reserving liquid; set corn aside. Place masa harina in a large bowl. In a small bowl, combine the broth, butter, egg and reserved corn liquid; stir into masa harina just until moistened. Set aside., In a large skillet coated with cooking spray, cook pork and onion over medium heat until pork is no longer pink. 5 cups potatoes, peeled and cubed
2 tablespoons butter, or to taste
salt to taste
2 eggs, beaten
½ cup vegetable oil
1 clove garlic, minced
1 onion, diced
2 tomatoes, diced
1 tablespoon tomato paste
1 pound ground beef
2 tablespoons shredded panquehue cheese
½ teaspoon chopped fresh parsley
salt and black pepper to taste
1 pinch cayenne pepper

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  • Place the potatoes into a large pot and cover with salted water. Bring to a boil; reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the hot potatoes with butter and salt. Let cool until just warm; stir in the beaten egg until smooth.

The idea for this recipe though came to me after preparing two small steaks of CSB the previous night and thinking to myself how much it tasted like pork. Pork goes incredibly well with BBQ sauce and I've also heard of gourmet restaurants serving CSB wrapped in potato. The following night I prepared this Sheppard's pie with the other half of the fillet and it exceeded my expectations.

You can smoke bake using a charcoal grill, gas grill, or a traditional smoker with a smoking temperature you can control (water smokers have a set temperature of 225°F to 250°F and will not work for this recipe). When chiles from Hatch, New Mexico, come to market in August, I stock up on enough to roast and freeze for chile pies, pots of Southwestern chili, and batches of salsa through the winter months. You can substitute other varieties of chiles (or bell peppers for a less spicy result) in this recipe and experiment with additional ingredients, such as a garnish of chopped scallions, cilantro, or parsley. A teaspoon of your favorite chili seasoning blend or barbecue dry rub could add a special accent. If you can't get Hatch chile peppers, no problem. Buy fresh green Anaheim peppers and fire roast them at home. For a true Southwestern flavor use the heavier mesquite wood-very sparingly here-or pecan. 1 frozen prepared deep-dish pie crust
8 ounces fire-roasted mild Hatch or other chile peppers, seeded and sliced into strips of varying size (see Note)
8 ounces shredded cheddar-Monterey Jack cheese blend
1/4 cup chopped Texas sweet or Vidalia onions
1/2 teaspoon olive oil
4 large eggs, beaten
1/4 cup wood chips, soaked in water and drained, or 1/2 cup dry wood chips for a gas grill
8 ounces hickory- or maple-smoked bacon, cooked until crisp and chopped

  • 1. Fill your charcoal chimney with briquets, set the chimney on the bottom grill grate, and light or prepare a fire in your smoker. For a gas grill, turn half the burners to high.

Scatter the drained wood chips on the hot coals, or put the dry wood chips in a metal container and place closest to a burner on a gas grill. Place the pie on the indirect side of the grill. When the smoke starts to rise, close the lid.
  • 5. Smoke bake the pie at 350°F for 40 to 45 minutes or until the crust has browned, the filling has set, and the pie has a mild, smoky aroma. Sprinkle with the bacon before serving.
