For those of you who live in a place where Taco Bell does not sell their classic Chilito (and judging from Net, this includes alot of places), you can simply make them at home! This recipe is something I developed through trial and error. It is VERY close to the taste of the original. It also has that perfect "chilito" texture. Enjoy!! flour tortilla
1/2 lb hamburger
1 tablespoon flour
8 ounces refried beans
shredded cheddar cheese
hot sauce

Steps:

  • Brown the hamburger and crumble into very small pieces; drain, but reserve some of the fat.
  • Place hamburger back onto heat and add flour and mix until it is thick.
  • Add the beans and heat through.
  • Add the hot or mild sauce 1 packet at a time until you achieve that 'chilito' taste (usually 8 packets will do).
  • Add the cheese, enough to make a big gooey mess, under medium heat.
  • Taste, and you might need to add a little more sauce.
  • Now here is the trick for that 'chilito' texture:.
  • Take a tortilla and run warm water all over it to soften. The pop it in the microwave for 20 seconds to "steam" it.
  • Fill tortilla with hot chilito filling, fold, and eat it. There will be a smile on your face.

1 pound ground beef
1 small onion, diced
3 Tablespoons chili powder
1 teaspoon salt
2 cups water
1 cup Jasmine rice
1 (16 ounce) can re-fried beans
1 (6 ounce) can tomato paste
2 Tablespoons cornstarch (optional)
2 cups sharp cheddar cheese
12 large flour tortillas, warmed in oven or microwave.

Steps:

  • In a large pot or dutch oven, cook ground beef, onions, chili powder and salt. Cook until ground beef is cooked through and onion is translucent. Add water and rice to pot. Mix well and bring to a boil. Put lid on pot and lower heat to low. Cook for 20 minutes. Once rice is cooked through, add re-fried beans and tomato paste. Stir to combine. If mixture is soupy then mix 2 Tablespoons of cornstarch with 1Tablespoon of water in a small bowl. Mix well and add it to rice mixture. If rice is NOT soupy, skip this step. Add 1 1/2 cups of cheese to rice mixture and mix well. Scoop 1/2 cup of mixture into each tortilla and roll up like a burrito. Serve immediately.

I'm posting this recipe in response to seeing many inaccurate copycat recipes online. This is an extremely cheap and easy item to make but every other recipe is too complicated, uses too many ingredients, and adds things which were never in Taco Bell's version. They may be good additions but they aren't Taco Bell copycats!

2 -3 tablespoons hormel no-bean chili
1 cup medium cheddar, shredded
2 -3 flour tortillas, thin ones are best

Steps:

  • Warm tortillas on a griddle. Keep warm.
  • Heat a few spoonfuls of chili in a small pot.
  • Add an equal or greater amount of cheese. More cheese than chili tastes most like Taco Bell's version.
  • Melt. Don't allow the cheese to stick and burn.
  • Wrap about a large spoonful or two of the melted chili cheese in a tortilla.
  • Makes a great chip dip. May be easily expanded to make enough for a group.
  • Optional (good) additions which make this unlike a Taco Bell version: beans, extra beef, onions, Taco sauce, other seasonings, Frito chips.
