Time 20m

Number Of Ingredients 12

16 scallops, large sea, shelled
1 tablespoon butter
1 tablespoon peanut oil
11/2 teaspoon garlic, crushed
11/2 teaspoon ginger, fresh, grated
5 scallions, fresh, finely sliced
1 lime, finely grated rind
1 - 2 birds eye chili, fresh, red, hot, very finely chopped
3 - 4 tablespoons lime juice, fresh
1 tablespoon brown sugar (optional)
4 cups rice, steamed, jasmine
4 lime wedges (garnish)

Steps:

  • 1. Wash and pat dry your scallops.
  • 2. Slice each scallop in half horizontally.
  • 3. Heat the butter and oil in a pan and add the garlic and ginger and fry for 1 minute.
  • 4. Next add the scallions and fry for 1 minute, you do not want to brown.
  • 5. Now add the scallops and fry over high heat for 5 minutes, stir in the lime rind, chili, lime juice and sugar and cook for another minute.
  • 6. Serve the scallops over the rice. Add the pan juices and garnish with the lime wedges.

Tips:

  • Use fresh, high-quality scallops: Look for scallops that are plump and have a slightly briny smell. Avoid scallops that are slimy or have a strong fishy odor.
  • Pat the scallops dry before cooking: This will help them sear better and prevent them from steaming.
  • Season the scallops liberally: Don't be afraid to use a generous amount of salt and pepper, as well as other spices like garlic powder, onion powder, and paprika.
  • Sear the scallops in a hot skillet: This will create a nice crust on the outside while keeping the inside tender and juicy.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the scallops will steam instead of sear.
  • Cook the scallops for 2-3 minutes per side: This is all the time they need to cook through. Overcooking will make them tough and rubbery.
  • Serve the scallops immediately: Scallops are best served hot off the skillet. You can garnish them with fresh herbs like cilantro or parsley, or a squeeze of lime juice.

Conclusion:

Chili lime scallops are a delicious and easy-to-make appetizer or main course. They are perfect for a party or a weeknight dinner. With their sweet and tangy flavor, chili lime scallops are sure to be a hit with everyone who tries them. So next time you're looking for a new and exciting way to cook scallops, give this recipe a try. You won't be disappointed!
