2 boneless skinless chicken breasts
vegetable stock or water, to cover
1 teaspoon vinegar or 1 teaspoon lemon juice
1 bay leaf
2 red bell peppers
75 g cucumbers, sliced
140 g mixed salad greens
2 -3 tablespoons fresh parsley leaves
125 g plain low-fat yogurt
2 teaspoons sun-dried tomato paste
1 1/2-2 tablespoons fresh herbs, finely chopped (basil, chives or parsley)
1 small garlic clove, crushed
1 tablespoon lemon juice
1/8-1/4 teaspoon smoked paprika (to taste)
salt and pepper, to taste

Steps:

  • Place the chicken breasts in a frying pan with the vinegar, white wine or water and bring to the boil.
  • Lower the heat to a very gentle simmer and cook for 25 minutes until the chicken is done.
  • Meanwhile, to start the salad, heat the grill to the highest setting and grill the whole red peppers until they are blistered and blackened all over.
  • Remove from the heat, place in a bowl and cover with food wrap. Leave to stand for 10 minutes to make the skins easier to remove.
  • When the chicken is cooked, remove it from the pan and set aside to cool on paper towels.
  • Peel the black skins from the peppers, discard the core and seeds and cut the flesh into strips. Combine in a salad bowl with the cucumber, salad leaves and parsley leaves.
  • In a small mixing bowl, combine all the ingredients for the sauce. Cube the cooled chicken and stir in to the sauce. Arrange the salad on serving plates and top with the dressed chicken and serve.
  • Note: You may want to add a dash of Balsamic vineger to the sauce if you find it too tart.

3 whole (6 split) chicken breasts, bone-in, skin-on
Olive oil
Kosher salt and freshly ground black pepper
1 1/2 cups good mayonnaise (recommended: Hellman's)
1/3 cup dry white wine
1/4 cup chutney (recommended: Major Grey's)
3 tablespoons curry powder
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions, white and green parts (2 scallions)
1/4 cup raisins
1 cup whole roasted, salted cashews

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken into large bite-size pieces.
  • For the dressing, combine the mayonnaise, wine, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth.

100g bag blanched hazelnuts , minus 3 tbsp for the sauce, below
2 tbsp olive oil
small knob of butter
450g pack chicken livers , cut into bite-size pieces
125ml glass oloroso sherry
juice of ½ a lemon
120g bag rocket salad
sherry vinegar , to dress the leaves
2 garlic cloves
20g pack flat-leaf parsley , leaves only
3 tbsp blanched hazelnuts
2 tsp hot smoked paprika
4 tbsp olive oil

Steps:

  • Put all the ingredients for the sauce into a food processor, then whizz to a rough paste. Heat oven to 200C/180C fan/ gas 6. Put the remaining hazelnuts onto a baking sheet, roast for 5 mins until lightly toasted, roughly chop, then set aside.
  • Now make the salad - add the olive oil and butter to a large frying pan over a medium-high heat. Quickly fry the livers in 2 batches until browned, about 2 mins per batch. Add the sherry, then bubble for a few mins over a high heat. Stir in the sauce and allow it to thicken and heat through. Splash in the lemon juice, then season to taste. Dress the salad leaves with a little sherry vinegar. Spoon the livers and sauce onto serving plates, sprinkle with the toasted chopped hazelnuts, then scatter over the dressed salad leaves and serve straightaway.

1 whole roaster chicken (6 to 7 pounds) , rinsed and patted dry
1 tablespoon softened butter
3 tablespoons paprika
1 1/2 teaspoons coarse salt
1 1/2 teaspoons dried thyme
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 375 degrees. Tuck the wings under the chicken; tie legs together with a piece of kitchen twine. Rub with butter.
  • In a small bowl, combine paprika, salt, cayenne, and thyme. With dry hands, sprinkle chicken with spice mixture; don't rub. Place chicken in a cast-iron skillet.
  • Bake until coating is blackened, 30 to 45 minutes. Tent with foil; continue cooking until an instant-read thermometer inserted in thigh (avoiding bone) registers 165 degrees and juices run clear, about 1 1/2 hours. ⅓ cup all-purpose flour
2 tablespoons paprika
1 teaspoon salt

1 small head of lettuce, chopped
1 cup purple cabbage, chopped
1 cup carrot, chopped
1 fresh mango, peeled and diced
1 avocado, diced
2 slices thick pepper bacon, chopped
2 cups shredded rotisserie chicken (or leftover chicken)
3/4 cup monterey jack cheese, shredded
1 1/2 teaspoons chili powder
1/2 teaspoon cumin
1/2 teaspoon salt & pepper
1/4 cup Dijon mustard
1/4 cup mayonnaise
1/4 cup honey
1 tablespoon prepared mustard
1 tablespoon white vinegar
1/8 teaspoon paprika
1/8 teaspoon black pepper

Steps:

  • Wash and chop lettuce, cabbage, and carrots. Toss together in medium bowl and chill.
  • Peel and dice mango and avocado. Set on separate plate. (You can toss this with the salad if you plan to eat it all in one sitting, but if not then keep separate so it is not soggy.).
  • Fry bacon in skillet. Drain and set aside.
