1/2 cup plus 2 tablespoons extra-virgin olive oil
1 onion, finely chopped
3 cloves garlic, minced
1/4 teaspoon red pepper flakes
2 1/2 pounds tomatoes, cored and chopped
Kosher salt
1 cup tomato juice
3 sprigs fresh basil, plus chopped leaves for topping
5 cups cubed day-old country bread (crusts removed)
1 tablespoon red wine vinegar

Steps:

  • Heat 1/4 cup olive oil in a Dutch oven over medium-low heat. Add the onion and cook, stirring, until softened, 8 to 10 minutes. Add the garlic and red pepper flakes and cook until softened, about 1 minute. Increase the heat to medium, add the tomatoes and 1/2 teaspoon salt, and cook, stirring occasionally, until juicy, 2 to 3 minutes. Add the tomato juice, basil sprigs and 3 cups water. Bring to a simmer and cook until the tomatoes are very soft, 15 to 20 minutes.
  • Add 3 cups bread cubes and return the soup to a simmer. Cook, mashing the bread with a wooden spoon, until broken down, 5 to 7 minutes. Discard the basil sprigs. Stir in the vinegar. Working in two batches, puree the soup in a blender until smooth, adding 2 tablespoons olive oil per batch. Refrigerate until cold, at least 2 hours or overnight.
  • Before serving, heat the remaining 2 tablespoons olive oil in a skillet over medium-low heat. Add the remaining 2 cups bread cubes; cook, tossing, until golden, 5 to 6 minutes. Season the soup with salt; top with the croutons and chopped basil.

2 tablespoons olive oil
1 onion, chopped
2 bay leaves
1 tablespoon all-purpose flour
1 tablespoon ginger-garlic paste
1 teaspoon garam masala
½ teaspoon ground turmeric
1 tablespoon Indian chili powder
½ cup water, or as needed
1 (28 ounce) can tomato puree
1 tablespoon white sugar
salt to taste
⅓ cup heavy cream or half-and-half

Steps:

  • Heat oil in a large saucepan over medium heat; stir in onions and bay leaves, and cook about 5 minutes until the onions begin to soften. Add flour, ginger-garlic paste, garam masala, turmeric, and Indian chili powder. Cook and stir until fragrant, about 1 minute.
  • Pour the water into the pan, and bring to a boil while scraping the browned bits of food off of the bottom with a wooden spoon. Pour in the tomato puree and thin with additional water to desired consistency. Add sugar and salt; cook until sugar is dissolved and soup is hot, about 5 minutes.

3 pounds quartered plum tomatoes (about 15)
2 tablespoons olive oil, plus more for drizzling
1/4 teaspoon sugar
Salt and pepper
1 cup diced onion
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon caraway seeds
2 mild to medium crumbled dried chiles (such as New Mexican) or 1/4 teaspoon red-pepper flakes
2 cups low-sodium chicken stock
1 teaspoon plain yogurt, for garnish
Cherry tomoatoes, thinly sliced (if desired)

Steps:

  • Preheat oven to 450 degrees. Arrange plum tomatoes on a rimmed baking sheet. Drizzle witholive oil, sprinkle with 1/4 teaspoon sugar, and season with salt and pepper. Roast tomatoes until edges begin to wrinkle and juices release, about 35 minutes.
  • Transfer tomatoes and juices to a bowl. Heat olive oil in a medium saucepan over medium heat. Add diced onion, ground coriander, ground cumin, and caraway seeds, and cook, stirring occasionally, until onions are tender, about 4 minutes. Add chiles or red-pepper flakes to saucepan. Add tomatoes and juices, and toss to coat. Add chicken stock, and bring to a boil. Reduce heat, and simmer,about 10 minutes.
  • Filling a blender halfway and covering with a kitchen towel, puree soup in batches. Strain through a coarse sieve into a large bowl; discard solids. Season with salt and pepper. Chill soup for at least 3 hours or up to overnight. Garnish each serving with 1 teaspoon plain yogurt. Top with thinly slicedcherry tomatoes if desired.

3 garlic cloves
1 serrano chile
1 cup cucumber, peeled, seeded, and roughly chopped
1/4 cup roughly chopped onion
1/4 cup roughly chopped cilantro
1/2 cup homemade or low-sodium canned chicken stock, skimmed of fat
1 tablespoon fresh lime juice
1/2 teaspoon coarse salt
1/2 cup plain nonfat yogurt
1/2 cup water
1 small avocado, peeled, pitted, and cut into 1-inch cubes, for garnish

Steps:

  • Heat broiler. Place tomatillos, garlic, and serrano chile in a single layer on a rimmed baking sheet, and roast until tomatillos are soft and browned in spots, about 5 minutes. Turn all items; continue cooking until other side is soft and browned, about 5 minutes more. Remove from heat; let cool slightly.
  • Transfer baking sheet to a wire rack; let cool completely. Peel garlic; place cloves in the bowl of a food processor fitted with the metal blade. Add tomatillos, serrano, and any accumulated juices along with cucumber, onion, cilantro, stock, lime juice, and salt; blend until mixture is smooth. Add yogurt and the water; process until they are just combined.
  • Transfer to a large bowl or plastic storage container; cover with plastic wrap. Refrigerate at least 2 hours. To serve, ladle into bowls; garnish with avocado.

1 teaspoon mustard seeds, preferably brown
1 teaspoon whole cumin seeds
1 jalapeno pepper, seeded and minced
1 tablespoon finely chopped fresh ginger
1/2 teaspoon ground turmeric
1/2 teaspoon ground asafetida (optional, sold in spice stores or Indian food markets)
4 cups chopped peeled ripe tomatoes
2 cups water or defatted chicken stock
Salt and freshly ground black pepper
2 tablespoons chopped fresh coriander leaves
3/4 cup plain yogurt, stirred

Steps:

  • Heat heavy saucepan. Add mustard and cumin seeds and cook over high heat until they begin to sputter and dance around. Stir in the jalapeno and ginger, lower the heat and cook gently for a couple of minutes. Stir in the turmeric and, if using, the asafetida (a powdered gum resin).
  • Stir in the tomatoes and bring to a simmer, stirring. Add the water or stock. Season to taste with salt and pepper. Remove from the heat, cover and refrigerate until chilled.
  • Just before serving check the seasonings. Serve sprinkled with coriander. Serve the yogurt alongside so it can be stirred in to taste.

2 flavourful ripe tomatoes (150g) roughly chopped
1 small red pepper (150g) roughly chopped
Half a small red onion finely (150g) roughly chopped
1 clove garlic
1 tbsp white wine vinegar
2-3 drops Tabasco
1 small chilli chopped
Half a tsp sugar
Half a tsp celery salt
Salt & freshly ground black pepper

Steps:

  • Place all the ingredients in a food processor and whizz until blended and smooth.
  • Place a sieve over a bowl and strain the soup, pushing through as much as possible.
  • Discard the solids and season the soup with sea salt & freshly ground black pepper.
  • Chill, until very cold. (Or add a couple of ice cubes if you are short of time).
  • Pour into shot glasses and drizzle with a little more oil and maybe a leaf of celery.

From a cookbook simply titled Mediterranean. From a place where the tomatoes taste like sunshine, it's a little harder to make this soup in North America, where the tomatoes sometimes taste like water... I suggest using Roma tomatoes, but whatever you choose, make sure they smell like tomatoes! Otherwise this will taste like cold pasta sauce. Cook time includes time to cool and chill.

2 red peppers, halved, cored, and seeded
3 tablespoons olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 1/2 lbs tomatoes
2/3 cup red wine
2 1/2 cups chicken stock
salt & fresh ground pepper
chives, snipped to garnish

Steps:

  • Cut each pepper half into quarters. Place skin side up on a grill rack and cook until skins have charred. Transfer to a bowl and cover with a plate. (I put them on the barbeque to keep the heat out of the house.).
  • Heat the oil in a large pan. Add onion and garlic and cook until soft. Meanwhile, remove the skin from the peppers and roughly chop them. Cut the tomatoes into chunks.
  • Add the peppers and tomatoes to pan, then cover and cook gently for 10 minutes. Add wine and cook a further 5 minutes, then add stock and salt and pepper to taste and continue simmering 20 minutes.
  • Process the soup in a blender until smooth. (I let it cool a bit first. Easier to handle, and less like to explode!) Pour into a clean glass or ceramic bowl and leave to cool completely before chilling for at least 3 hours. When soup is cold, season to taste. Serve in bowls topped with croutons, if you wish, and garnished with snipped chives.

Add honey and simmer until mixture is very thick, stirring frequently, about 8 minutes. Add chicken stock and next 5 ingredients. Simmer 30 minutes.
  • Working in batches, strain soup into large bowl, pressing on solids to release juices. Discard solids. Season soup with salt and pepper. Chill soup at least 8 hours.
