2 long Chinese eggplants, cubed
1 ½ tablespoons soy sauce
1 tablespoon red wine vinegar
1 tablespoon white sugar
1 green chile pepper, chopped
1 teaspoon cornstarch
½ teaspoon chili oil, or to taste
2 teaspoons salt
2 tablespoons vegetable oil

Steps:

  • Place the eggplant cubes into a large bowl, and sprinkle with salt. Fill with enough water to cover, and let stand for 30 minutes. Rinse well, and drain on paper towels.
  • In a small bowl, stir together the soy sauce, red wine vinegar, sugar, chile pepper, cornstarch and chili oil. Set the sauce aside.
  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Fry the eggplant until it is tender and begins to brown, 5 to 10 minutes. Pour in the sauce, and cook and stir until the sauce is thick and the eggplant is evenly coated. Serve immediately.

1 lb eggplant
1 lb chicken
1 teaspoon garlic
1 tablespoon cornstarch
canola oil
green onion
2 tablespoons oyster sauce
2 tablespoons soy sauce

Steps:

  • Combine Spicy Sauce Ingredients.
  • Cut up chicken to desired size.
  • Peel eggplant and cut up to desired size.
  • Deep fry eggplant submerged in Canola Oil in a wok about 2 minutes, then remove and place on paper towel to drain.

2 tablespoons peanut oil
4 cloves garlic, minced
1 small onion, halved and sliced

Steps:

  • Place tofu on a paper towel-lined plate. Cover with another paper towel and place a heavy pot on top. Allow to sit until extra moisture has released into the paper towels, about 30 minutes.
  • Heat peanut oil over medium-high heat in a large skillet. Add tofu, onion, and garlic and saute until onions are soft, about 5 minutes, adding water if tofu sticks to the pan. Steps:

  • Cut off 1 1/2 inches from bottom of eggplant and discard. Move knife 1/4 inch from cut side and cut almost but not all the way through eggplant (this is the pocket). Move knife 1/4 inch from pocket cut and cut slice free from eggplant. Make 7 more slices with pockets in same manner.
  • Stir together pork, scallion, ginger, soy sauce, and salt in a bowl with a fork. Spread 1 tablespoon filling in each eggplant pocket.
  • Heat 1/2 inch oil in a 10-inch heavy skillet over moderate heat until it registers 360°F on thermometer (see cooks' note, below).
  • Meanwhile, whisk together flour, egg, and water in a bowl until batter is smooth. 8 firm eggplants, 1/2 pound each, end trimmed, cut into bite-size pieces
2 tablespoons grated ginger
4 cloves garlic, peeled and minced
3 tablespoons hot bean paste
2 cups chicken broth
3 tablespoons soy sauce
2 tablespoons sugar
1 tablespoon brown vinegar
1 tablespoon sesame oil
8 scallions, trimmed and minced

Steps:

  • Heat the oil in a wok or cast-iron skillet over medium heat until hot. Add eggplant and, stirring constantly, cook until soft, about 5 minutes. Remove the skillet from the heat. 1/2 teaspoon hot red pepper flakes
1/2 cup sherry wine
1 1/2 cups water
2 tablespoons peanut oil
2 medium eggplants

Steps:

  • Cut unpeeled eggplant into 3/4" by 3/4" by 2" sticks.

1 cup cornmeal
1 pinch cayenne pepper, or to taste

2 eggs, beaten

1 teaspoon salt
2 tablespoons vegetable oil
6 garlic cloves, minced
1 small onion, sliced
1/4 cup soy sauce

1 tablespoon rice vinegar
1 teaspoon Asian chili sauce

  • Trim off eggplant stems.

1 large or four baby eggplant
Coarse salt
2 tablespoons sesame seeds
4 tablespoons hoisin sauce
1 tablespoon soy sauce
1 teaspoon sugar
2 tablespoons dry sherry
1 tablespoon peanut or vegetable oil
1 scallion (white and green part, chopped)
1/4 cup chicken stock

Steps:

  • Slice the eggplant in pieces half an inch thick. If using large purple eggplant, sprinkle with salt and allow to drain for one hour. Pat dry with paper towels.
  • Using a wok or large frying pan, brown the sesame seeds over medium heat. Remove and set aside. In a small bowl combine the hoisin and soy sauces, sugar and sherry to make a seasoning sauce.
  • Steam the eggplant slices over high heat for five minutes. Remove from steamer and allow to cool. Place on a rack and broil for five minutes on each side. Transfer the eggplant to a preheated flat serving dish and arrange the slices in an overlapping pattern.
  • Place the wok or skillet over high heat for about one minute. Add the oil and heat until hot but not smoking. Add the scallions and stir-fry for a few seconds.
  • Re-stir the seasoning sauce and add it all at once to the wok; stir-fry for 30 seconds. Pour in the stock and stir another 15 seconds. Pour the sauce over the eggplant slices and sprinkle with sesame seeds. Serve immediately.

4 medium eggplant
2 tablespoons vegetable oil
4 teaspoons sesame oil
6 cloves garlic, minced
4 tablespoons chopped fresh ginger
6 scallions, trimmed and minced
1/2 teaspoon dried red-pepper flakes
7 tablespoons soy sauce
3 tablespoons light brown sugar
2 tablespoons rice-wine vinegar
2 tablespoons lemon juice
4 tablespoons chopped cilantro

Steps:

  • Preheat the oven to 425 degrees.
  • Place the eggplant on a baking sheet, and prick them in several places with a fork to allow steam to escape. Pour 1 tablespoon of the vegetable oil into your hands, and rub the eggplant. Roast them until soft, for 30 to 40 minutes, turning once halfway through the cooking. Remove from the oven, and set aside until the eggplant are cool enough to handle.
  • When cool, cut off the stems, and peel the eggplant. Place the pulp in a food processor, and process until smooth. Set aside.
  • Heat the remaining vegetable oil, along with the sesame oil, in a skillet over medium-high heat. Add the garlic, ginger, scallions and red-pepper flakes; cook quickly, stirring constantly, for 1 minute.
  • In a small bowl, whisk together the soy sauce, brown sugar and vinegar. Add to the skillet, and bring to a boil. Stir in the eggplant, and simmer for 3 minutes. Remove from the heat, and stir in the lemon juice and cilantro. Serve warm, at room temperature or chilled.

This is a combination of a number of different recipes along with my own personal preference changes. The sauce has a slight kick, so if you have people who are squeamish about spicy heat, you may want to cut down on the hot sauce.

1/2 lb boneless skinless chicken breast, sliced thin and cut into strips
1 teaspoon dried shrimp
2 tablespoons sherry wine (Shaoxing Cooking Wine)
3 garlic cloves, minced
1 large onion
2 medium eggplants
1 teaspoon hot sauce (Sriracha)
1/2 tablespoon dark soy sauce
1/2 tablespoon light soy sauce
1 tablespoon rice wine vinegar
1 teaspoon artificial sweetener or 1 teaspoon sugar
1 tablespoon tomato paste
4 teaspoons light olive oil or 4 teaspoons peanut oil, divided
1/2 cup chicken stock

Steps:

  • Brine chicken for 1-3 hours in solution of 2 cups water, 1/4 cup kosher salt and 1/4 cup sugar.
  • Soak dried shrimp in sherry for 1-3 hours.
  • Meanwhile, halve eggplant then slice halves radially into 4 slices per half.
  • and then into smaller pieces.
  • Spread on cooling racks over the sink or cookie sheets.
  • Sprinkle with salt and weight down with heavy cutting board.
  • Let drain for one hour or more.
  • Quarter and slice onion, set aside.
  • Mince garlic, set aside.
  • Drain chicken and pat dry.
  • Strain shrimp out of sherry and discard shrimp (reserve sherry).
  • Combine sherry, hot sauce, dark soy sauce,light soy sauce, rice wine vinegar, splenda and tomato paste and whisk together.
  • Add half of oil to wok and heat over high heat.
  • Add chicken and cook about 1/2 way (but browned on all sides).
  • Remove to a plate.
  • Add remaining oil and allow to come to temperature.
  • Add onions, stir fry for about 1 minute.
  • Add Eggplant, stir fry for about 5 minutes.
  • Replace chicken in wok.
  • Add Sauce and Stir fry until done.
  • Serve with brown rice.

2 tablespoons rice wine

1 tablespoon cornstarch
1 tablespoon canola oil
3 cloves garlic, minced
2 teaspoons minced fresh ginger
3 scallions, white part minced,
green part thinly sliced for garnish
1 to 3 serrano or jalapeno chilies, minced (for a milder dish, remove the seeds)

Steps:

  • 1. Preheat the grill to medium high heat. Peel the eggplants and cut on the diagonal into 1/4-inch slices. Brush the slices with sesame oil and grill over medium heat for 2 minutes per side or until golden brown. The recipe can be prepared up to 24 hours ahead to this stage. 2. 1 medium aubergine (eggplant)
2 cloves finely-chopped fresh garlic
1 teaspoon finely-chopped fresh ginger
1 tablespoon hoisin sauce
2 spring onions, finely chopped (green onions, scallions, gibbons)
1 teaspoon dark soy sauce

Steps:

  • Peel the aubergine if you hate the skin, or leave it on if you like the texture and think it looks pretty. Cut lengthways into oblong pieces about the size and length of 2 fingers side by side.
  • Boil 1 cm (1/2 inch) of water in a wide frying pan, then add the aubergine and cook, stirring occasionally and adding more water as needed, until aubergines are softened to your satisfaction, and very little water remains (about 7 minutes for me).
  • Remove the aubergine to a bowl, then heat another 1cm water in the pan. Add garlic, ginger and hoisin sauce, then simmer briskly for 10 minutes, stirring and adding more water as needed.
  • Add the soy sauce and spring onions to the pan, then add the cooked.

1 medium eggplant, cubed
1 teaspoon salt
16 ounces fresh Chinese wheat noodles
2 tablespoons sherry
1 tablespoon cornstarch
¼ cup red wine vinegar
⅓ cup water
1 tablespoon minced fresh ginger root
1 tablespoon white sugar
2 tablespoons vegetarian fish sauce
2 cups sliced onion
3 tablespoons canola oil
4 cloves garlic, minced
1 red bell pepper, julienned
4 tablespoons chopped, unsalted dry-roasted peanuts
1 tablespoon chopped fresh mint

Steps:

  • Place the eggplant cubes into a colander. Add the salt and toss well. Let the eggplant drain for 15 minutes, then rinse it lightly with water. Let the eggplant drain again in the colander.
  • Bring a large pot of water to a boil. Add the noodles and boil them for about 5 minutes, until they are tender. Drain and rinse well with cold water. Let the noodles drain in a colander for at least 10 minutes.
  • Combine the sherry with the cornstarch in a small bowl. Mix well and set aside.
  • In a saucepan combine the red wine vinegar, water, ginger, sugar, imitation fish sauce, and onions. Bring the mixture to a boil, turn the heat to low and let the mixture simmer for 5 minutes.
  • In a large skillet, preferably non-stick, heat 1 1/2 tablespoon oil over medium-high heat. Add the eggplant, and cook it for 5 minutes, stirring frequently. Add the garlic and red pepper and cook, stirring occasionally for 5 minutes more or until the eggplant softens. Add both the onion-vinegar mixture and the cornstarch-sherry mixture. Cook for 2 to 3 minutes, stirring occasionally. Keep the mixture warm.
  • In a large non-stick skillet heat the remaining 1 1/2 tablespoons oil over medium-high heat. When the oil begins to smoke, add the noodles, then place two or three plates on top of them so that more surface area will brown. Let the noodles sit over medium-high heat for 5 minutes. When the noodles have developed a golden brown crust on the underside remove the plates, turn the noodles over with a spatula and cook them 5 minutes on the other side. Then take the pan off the heat.
  • Add the peanuts to the eggplant mixture, and spoon it onto plates. Divide the noodles into four parts, and place them atop the vegetables and sauce. Sprinkle with mint, if you like, and serve.
