CHOCOLATE BONBON POPS (NO BAKE!)
I'm adding these to my gift baskets this year. I found the recipe in Better Homes and Gardens. They sound tasty and very easy, and they are quite cute for the kids, (and adults alike!) I like the fact they can be made a week ahead. The cooks at the magazine used Oreo brand sandwich cookies. I can get lollipop sticks at my little cake shop in town. I'll post pictures! (Cooking time is freezing and refrigeration time.)

- In large food processor bowl combine cookies and 3/4 cup of the nuts; pulse until cookies are crushed. Add orange liqueur, corn syrup, and cocoa powder; process until combined. Add remaining nuts; pulse until coarsely chopped.
- Line a large baking sheet with parchment paper. Shape cookie mixture in 1-inch balls. Place on baking sheet, insert a lollipop stick, and freeze for 30 minutes.
- In a small saucepan combine chocolate pieces and shortening. Cook and stir over medium-low heat just until melted. Remove from heat. Dip pops in chocolate. Return to baking sheet. Loosely cover and refrigerate 1 hour or until chocolate is set. If using liqueur, flavor will mellow after a day or two. Makes 20 pops.
- To Store: Place in covered container; refrigerate up to 1 week.

- Crush the chocolate into smithereens in the food processor. Heat the cream and milk until just about boiling, add the vanilla and allspice and pour through the funnel over the chocolate. Let stand for 30 seconds. Process for 30 seconds, then crack the egg down the funnel and process for 45 seconds.
- Pour into whatever little cups you're serving in, and sit them in the refrigerator for 6 hours or overnight. But remember to take them out of the refrigerator a good 20 minutes before you want them to be eaten; the chill interferes with their luscious, silky richness.
- This makes 2 cups altogether: enough to fill 8 little pots of approximately 1/4 cup capacity. But if you've got only bigger cups, just augment quantities.

- Special equipment: 2-ounce ice cream scooper
- Place a large plate or small platter in the freezer for at least 30 minutes.
- Set up an assembly line for the rolling and coating of the ice cream balls in the following order: ice cream, bowl of coconut flakes and the caramel sauce. Remove the ice cream from the freezer and allow to soften, about 5 minutes. Remove the cold plate from the freezer and place at the end of the assembly line.
- Using a 2-ounce ice cream scooper, roll 1 ball of ice cream and place into the coconut flakes. From there, place it onto the cold plate. Drizzle with the caramel sauce and repeat. You should be able to make about 6 large bonbons.
- Place the bonbons into the freezer to set for at least 15 minutes. Then, remove the bonbons from the freezer and sandwich each one between 2 of the chocolate chip cookies.

- In large bowl, combine margarine, confectioners' sugar, condensed milk, coconut, chopped walnuts and vanilla. Stir well. - Place all cookie dough ingredients in bowl of your mixer.
- Beat on medium speed until a soft, smooth dough is formed.
- Remove from bowl, shape into a 3/4" thick disc.
- Wrap well in plastic wrap and chill for 30 minutes, or as long as overnight.
- Preheat oven to 350, line two baking sheets with parchment paper.
- Shape dough into small balls, about the size of a large gumball (a teaspoon cookie scoop will help).
- Bake for 7-10 minutes.
