2 (7.4 ounce) packages Martha White® Chocolate Chip Muffin Mix
⅔ cup heavy cream
6 cups sliced strawberries, sweetened to taste
1 cup heavy cream, chilled
½ teaspoon vanilla extract
2 tablespoons powdered sugar

Steps:

  • Heat oven to 400 degrees F. Spray a large baking sheet with no-stick cooking spray. Chill beaters from electric mixer and medium mixing bowl for 10 minutes in the freezer. Combine muffin mix and 2/3 cup cream in medium bowl. Stir with a fork until all ingredients are moistened and mixture forms a dough. Press into a ball. Pat into a 7-inch round on lightly floured surface. Cut into 8 wedges. Place on baking sheet. Bake 12 to 15 minutes or until golden brown.

1/3 cup granulated sugar
4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) cold butter, cut up
2 cups (12-ounce package) semi-sweet chocolate morsels
1 1/2 cups buttermilk
1 (12-ounce) container frozen lite whipped topping, thawed
4 cups strawberries, sliced

Steps:

  • Preheat oven to 400°F. Grease baking sheets. Combine flour, sugar, baking powder, baking soda and salt in large bowl. Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. Stir in morsels. Stir in buttermilk with a fork just until moistened. Knead 2 or 3 times on floured surface. Pat to 3/4-inch thickness. Cut into sixteen 2 1/2 x 2 1/2-inch diamonds; place on prepared baking sheets. Bake for 12 to 14 minutes or until lightly browned. Remove to wire racks to cool completely. Cut one shortcake in half horizontally. Spread bottom half with whipped topping; top with strawberries. Cover with shortcake top; layer with more whipped topping and strawberries. CRUST
1 c sugar, divided
1/2 c butter (1 stick), softened
1 large egg
2 tsp vanilla, divided
1 1/2 c all purpose flour
1/2 tsp baking powder
1 c mini chocolate chips, divided
FILLING
16 oz dairy sour cream
2 large eggs
TOPPING
1 small container cool whip
2 c fresh strawberries, rinsed and halved

Steps:

  • 1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  • 2. Beat together 1/2 cup sugar and the butter in a large bowl. Add 1 egg and 1 teaspoon vanilla; beat until creamy. Gradually add flour and baking powder, beating until smooth. Stir in 1/2 cup chocolate chips. Press mixture onto bottom of prepared pan.
  • 3. Stir together sour cream, remaining 1/2 cup sugar, 2 eggs, and remaining 1 teaspoon vanilla in medium bowl. Stir in remaining 1/2 cup chocolate chips. Pour over mixture in pan.
