1 teaspoon balsamic or red wine vinegar

1 to 2 ounces dark chocolate

1 1/4 cups superfine sugar or 1 1/4 cups sugar
1 teaspoon white vinegar
1 teaspoon pure vanilla extract
1 teaspoon cornstarch
3 tablespoons Dutch-processed cocoa powder
2 ounces bittersweet chocolate, chopped
1 cup heavy whipping cream
1 tablespoon sugar
6 ounces raspberries
