Provided by Kathie Carr

Categories     Cookies

Time 20m

Number Of Ingredients 8

1/2 c butter
1/4 c cocoa, unsweetened
3/4 c sugar
2 eggs, beaten
1 tsp vanilla extract
1 c all purpose flour
canned or home made chocolate frosting, optional
whole pecans for garnish, optional

Steps:

  • 1. Melt butter in a medium saucepan. Add cocoa and mix well. Remove from heat. Stir in sugar. Add vanilla, then stir in eggs, being sure mixture has cooled enough so that eggs don't cook, but instead mix in well. Stir in flour.
  • 2. Drop dough by teaspoons-full onto hot waffle iron. You can make 4 at a time. Close waffle iron and let bake for 1 minute. Remove to wire racks to cool. Frost with chocolate frosting and top with a pecan, if desired.
  • 3. If you prefer not to frost cookies you can sprinkle with with powdeed sugar to finish.

Tips:

  • Use a good quality chocolate, at least 60% cocoa content, for the best flavor.
  • If you don't have a waffle iron, you can cook the cookies in a regular skillet over medium heat.
  • Be careful not to overcook the cookies, as they will become dry and crumbly.
  • Let the cookies cool slightly before serving, so that they have a chance to firm up.
  • Store the cookies in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.
