2 lbs ground meat, of choice
4 slices bacon
1 small onion, chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
1 garlic clove, minced
1 (55 ounce) can baked beans (recommend Bush's)
8 ounces tomato sauce

Steps:

  • Saute the bacon in a large pan over medium heat. Remove and drain on paper towel.
  • Saute the chopped meat, onion, peppers and garlic in the bacon renderings until the meat is browned.
  • Chop the bacon into 1/2 inch bits and add to the meat.
  • Add the tomato sauce and beans.
  • Reduce the heat, cover and simmer 20-30 minutes.

2 large onions, chopped
8 cloves garlic, chopped
1/3 cup plus 2 tablespoons chili powder
1 teaspoon dried oregano
2 tablespoons tomato paste
1 28-ounce can whole plum tomatoes, coarsely crushed with your hands
1 3/4 cups low-sodium beef broth
1/3 cup brewed espresso or strong coffee
2 15-ounce cans pinto beans, drained and rinsed
Shredded cheddar cheese, sour cream and/or diced avocado, for topping

Steps:

  • Heat 1/2 tablespoon vegetable oil in a large pot over medium-high heat. Pat the beef dry and season with salt and pepper. Brown in batches, about 4 minutes, adding more oil as needed. Transfer to a plate.
  • Reduce the heat to medium and add 1 1/2 tablespoons oil to the pot. Add the onions and garlic; cook, stirring, until golden, about 6 minutes. Add 1/3 cup chili powder, the oregano and tomato paste; cook, stirring, 30 seconds.

2 tbsp olive oil
1 onion , finely sliced
1 small garlic clove , crushed
400g can butter beans , drained and rinsed
100ml chicken stock
200g spinach
3 tbsp crème fraîche
½ tbsp wholegrain mustard
2 pork chops

Steps:

  • Heat 1 tbsp of the oil in a saucepan. Add the onion and fry over a medium heat for 10 mins, or until softened. Add the garlic and cook for 1 min. Stir through the butter beans and stock and bring to a simmer. Add the spinach. Cover and cook for 3 mins or until the spinach is wilted.
  • Blitz the mixture using a hand blender for 10 secs, leaving some chunky, whole beans. Stir through the crème fraîche and mustard and season generously, then simmer for 3 mins to thicken. Set aside.
  • Season the pork chops on both sides. Heat the remaining oil in a non-stick pan over a medium-high heat. Hold the chops on their sides with a pair of tongs to brown the fat. Cook each one on either side for 7 mins or until cooked through. Spoon the beans onto plates, slice the pork and arrange on top.

1 (16 ounce) container sour cream
2 cups salsa (medium or mild)
6 cups crushed plain tortilla chips

2 plum tomatoes, finely chopped
3 -4 green onions, chopped

Steps:

  • Grease a 13 x 9-inch baking dish.
  • In a skillet over medium heat brown the ground beef with garlic, onion, green bell pepper and jalapenos (if using) drain fat then add in taco seasoning, salt and black pepper to taste; heat stirring for 1-2 minutes; transfer the mixture into a large mixing bowl.
  • Add in black beans, corn, sour cream and salsa; mix until well combined.
  • Spoon 1/3 of the ground beef mixture or enough to cover the bottom of the dish.
  • Arrange HALF (3 cups) of the crushed tortillas on top of the ground beef mixture, then sprinkle about 1 cup shredded cheese.
  • Spoon another 1/3 of meat mixture on top of the cheese.
  • Cover with remaining half (3 cups) of crushed chips then sprinkle with 1 cup shredded cheese.
  • Spread the final layer of meat mixture on top then sprinkle with 1 cup cheese.
  • Top the casserole with green onions and then chopped tomatoes.
