Steps:
- To prepare vinaigrette: In a medium mixing bowl, combine the vinegar and 1/3 cup cup of water.
- Whisk the mustard and salad dressing mix until well mixed.
- Add the olive oil and whisk until the dressing is emulsified.
- Let the dressing rest for a few minutes before using so that the flavors can blend. Refrigerate in a tightly-lidded glass or rigid plastic container for up to 7 days and whisk before using.
- Note: If you use Good Seasons brand mix, two packets work well.
- To prepare salad: Cut the iceberg and romaine lettuces into ½-inch squares. Transfer to a large mixing bowl.
- Cut the artichoke hearts into eighths and the hearts of palm into 1/4-inch-long pieces and add to the lettuce.
- Peel the avocado and remove the pit. Cut the avocado into ½-inch cubes and add to the lettuce.
- Crumble the blue cheese over the salad. Sprinkle the bacon bits, chopped egg, onion, and tomato over the salad.
- Add the vinaigrette, toss well, and serve.
- Note: To hard-cook eggs, put them in a saucepan with cold water to cover. Bring to a boil over medium-high heat. Cover, remove from the heat, and set aside for 15 minutes, during which time the eggs will harden. This is a better method than cooking the eggs in boiling water. There is less chance of the eggs cracking.
PORTILLO'S CHOPPED SALAD (KINDA LIKE)
Portillo's is a Chicago institution, a hot dog stand that was started in 1963 by Dick Portillo's in a small trailer with no running water, and has now grown to 47 locations. Their chopped salad is famous. The Italian Dressing is from the Chicago Sun-Times. It is similar to the dressing found on salads at Portillo's and Maggiano's restaurants. Tip: If you make the dressing ahead of time and add a little bit to the cooled pasta and let it soak it up in the refrigerator for added flavor. Also, I believe chopped grilled chicken is in the original recipe.

CHOPPED SALAD
The key is chopping the veggies into small pieces. This is what gives the salad such a clean, fresh taste. The small pieces impart juices and flavor. No dressing required. This is good for lunch or as a side dish for dinner. It can be kept in the refrigerator for several days. NOTE: For a Fatoush-type of salad, toast or broil a slice of pita bread; break-up the crispy pieces into the salad.

CHOPPED SALAD WITH LEMON BASIL DRESSING
This is one of my all-time favorite salads! I've had it twice at Ruth's Chris Steak House and was excited to find this copycat recipe on the web. It's an eclectic mix of 11 ingredients and you can customize it to suit personal tastes. The restaurant makes the onion rings by coating thinly sliced red onion rings with flour, then deep-frying in oil, but you can substitute canned french-fried onion rings if desired (granted, they're not the same) or skip the onion rings entirely. This recipe makes 4 main-dish salads ( my girlfriend and I usually split one salad at the restaurant and it's plenty!)

Tips:
- Use a variety of ingredients. This will make your salad more flavorful and interesting. Some good options include leafy greens, vegetables, fruits, nuts, seeds, and cheese.
- Chop your ingredients into small pieces. This will make them easier to eat and will help the flavors to blend together.
- Use a light dressing. A heavy dressing will overwhelm the flavors of the other ingredients. A simple vinaigrette or olive oil and lemon juice is a good option.
- Toss the salad just before serving. This will help to prevent the dressing from wilting the greens.
Conclusion:
Chopped salads are a delicious and healthy way to get your daily dose of fruits and vegetables. They are also a great way to use up leftover ingredients. With a little creativity, you can create endless variations of chopped salads. So next time you're looking for a quick and easy meal, give chopped salad a try!
