CHOPPED SALAD WITH HERBS
Chopped Salad: Here's one excellent excuse to spend some time at the farmers' market. This salad, prepared by Mark Bittman and Sam Sifton for a holiday feast, is chock-full of fresh vegetables and worth the prep time. Hunt down a few different herbs to give the salad a complex flavor and aroma. One herb will do in a pinch, but don't skimp if you don't have to.

Steps:
- The lettuce may be Bibb or Boston, romaine or leaf; the greens may be a few leaves of any or all of those listed above, or you may select others of your choosing. The prime requisite is that they be fresh and crisp, well washed and thoroughly dried. No drop of water should be allowed to lurk in the fold of a leaf, or the salad will be watery and quick to wilt.
- Rub an outsize salad bowl with the garlic, peeled and halved, until there is a good coating well up on all sides. Break the lettuce and greens into the bowl. Snip the herbs small and crush them lightly as you add them to the greens. Measure the oil into a big spoon and sprinkle it over the salad. Dissolve the salt and pepper in the vinegar in the same spoon, and sprinkle this on the salad. Then begin a light and rhythmic tossing, which is more a gentle turning of the greens over and over until every leaf is coated and the seasonings well distributed. Add the chives, taste to see if more salt is needed, then serve.
CHOPPED HERB SALAD WITH FARRO
This dish is modeled on a Middle Eastern tabouli. Add just one cup of cooked farro or spelt to a generous mix of chopped parsley, mint, arugula and other herbs like basil or dill. Notice that I'm calling this dish a chopped herb salad with farro and not a farro salad with chopped herbs. It's modeled on an authentic Middle Eastern tabouli, which should be all about the parsley, with just a small amount of bulgur. I add just one cup of cooked farro or spelt to a generous mix of chopped parsley, mint, arugula and other herbs like basil or dill. There are also chopped tomatoes in the mix, all of it tossed with lemon juice and olive oil.

Steps:
- In a large bowl, combine parsley, mint, arugula and/or other herbs, tomatoes, scallions, farro, sumac, lemon juice and salt to taste. Refrigerate for 2 to 3 hours so the farro marinates in the lemon juice.
- Add olive oil, toss together, taste and adjust seasonings. The salad should taste lemony. Add more lemon juice if it doesn't. Serve with lettuce leaves if desired.

Tips:
- Use a variety of fresh herbs. This will give your salad a complex and flavorful taste. Some good choices include basil, chives, cilantro, dill, mint, oregano, parsley, and thyme.
- Chop the herbs finely. This will help them distribute their flavor evenly throughout the salad.
- Use a light dressing. A heavy dressing will overpower the delicate flavors of the herbs. A simple vinaigrette or lemon-herb dressing is a good choice.
- Add some crunch. This could be in the form of chopped nuts, seeds, or croutons.
- Serve the salad immediately. Herbs are at their best when they are fresh, so don't let the salad sit around for too long before serving.
Conclusion:
Chopped salads with herbs are a delicious and healthy way to enjoy your favorite greens. They are packed with flavor and nutrients, and they can be easily customized to your liking. So next time you're looking for a quick and easy meal, give a chopped salad with herbs a try.
