4 medium beets - scrubbed, trimmed and cut in half
⅓ cup chopped walnuts
3 tablespoons maple syrup
1 (10 ounce) package mixed baby salad greens
½ cup frozen orange juice concentrate
¼ cup balsamic vinegar
½ cup extra-virgin olive oil
2 ounces goat cheese

Steps:

  • Place beets into a saucepan, and fill with enough water to cover. Bring to a boil, then cook for 20 to 30 minutes, until tender. Drain and cool, then cut in to cubes.
  • While the beets are cooking, place the walnuts in a skillet over medium-low heat. Heat until warm and starting to toast, then stir in the maple syrup. Cook and stir until evenly coated, then remove from the heat and set aside to cool.
  • In a small bowl, whisk together the orange juice concentrate, balsamic vinegar and olive oil to make the dressing.
  • Place a large helping of baby greens onto each of four salad plates, divide candied walnuts equally and sprinkle over the greens. Place equal amounts of beets over the greens, and top with dabs of goat cheese. Drizzle each plate with some of the dressing.

1/4 cup fresh flat-leaf parsley leaves
1/4 cup fresh mint leaves
1/4 cup fresh cilantro leaves
3/4 cups baby cherry red and yellow tomatoes
1/2 red bell pepper, seeded and cut into 1-inch-long matchsticks
1 tablespoon raspberry or white balsamic vinegar
1 tablespoon freshly squeezed lemon juice (1/2 lemon)
Salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil

3 beets (about 3/4 pound), trimmed
2 tablespoons granulated sugar
2 tablespoons tarragon vinegar
Kosher salt to taste
2 teaspoons Dijon mustard
2 tablespoons extra-virgin olive oil
Freshly ground pepper to taste
8 radishes, trimmed and thinly sliced
12 pear or cherry tomatoes, quartered
1/4 small red onion, peeled and thinly sliced
1 scallion, trimmed and thinly sliced
8 romaine lettuce leaves, ribs removed, stacked and thinly sliced
17-ounce log goat cheese, cut into 12 slices

Steps:

  • In a large saucepan, combine the beets, sugar and 1 tablespoon vinegar and cover with salted water by 1 inch. Bring to a boil, lower the heat and simmer, covered, until very tender, about 45 minutes. Drain and place in a bowl in the refrigerator to cool. When cool, rub the skins off with your hands. Discard the skins. Slice the beets into 16 thin slices.

2 large red beets

2 teaspoons fresh thyme leaves

1/4 ounce of fresh mint
3 nectarines
4 tablespoons walnut oil
1/2 lemon
1 tablespoon honey
3 ounces mixed salad greens
3 ounces fresh arugula
2 ounces walnuts

Steps:

  • Cut the goat cheese into long slivers of about 1/3" wide.
  • Peel the nectarines and divide them in segments.
  • Heat a heavy skillet or stovetop grill pan. Thinly brush the nectarine segments with about 1 tbsp walnut oil. Grill them for a minute each side and take from the pan.

2 tablespoons extra virgin olive oil, more as necessary
4 to 6 cups mesclun or other greens, trimmed, washed and dried
Salt and pepper
2 tablespoons sherry or balsamic vinegar, or to taste
1/2 teaspoon minced fresh tarragon or 1/4 teaspoon dried
8 ounces goat cheese

Steps:

  • Peel, rinse, and quarter or slice beets. Place in a small saucepan with 1/2 cup water and the olive oil. Cook at a moderate boil, covered, until beets are tender, about 20 minutes. Add more water if pan dries out during cooking. When beets are done, uncover, raise heat to high, and cook until liquid is reduced to about 1/4 cup, then cool.
  • Arrange greens on a platter. If beets are quartered, cut into small chunks. Combine cooking liquid of beets with salt, pepper, vinegar and tarragon. Taste, and add a little more olive oil or vinegar if necessary: mixture should be sharp.
