TURKEY AND CHORIZO STUFFED PORTABELLA MUSHROOMS

For a Mexican-inspired twist, our earthy and filling turkey-stuffed portabella mushrooms include Oaxaca cheese and chorizo sausage.

5 tablespoons olive oil
1/2 cup chopped white onion
1 lb lean ground turkey
10 oz Mexican chorizo sausage, casings removed
1 bell pepper (any color)
2 cloves garlic, finely chopped
6 large portabella mushrooms
1 1/2 cups shredded Oaxaca cheese (6 oz)
Chopped fresh cilantro

Steps:

  • Heat oven to 350°F. Line cookie sheet with sides or very shallow baking pan with foil.
  • In 10- or 12-inch skillet, heat 2 tablespoons of the oil over medium-high heat. Add onion; cook 2 minutes, stirring frequently, until translucent. Add turkey; cook about 10 minutes, stirring occasionally, until no longer pink. Drain off any excess grease.
  • Crumble sausage into cooked turkey. Cover skillet; cook 5 to 10 minutes or until sausage is no longer pink. Using potato masher, mash sausage and turkey together. Add bell pepper and garlic; cook 10 minutes longer or until bell peppers are softened.
  • Clean mushrooms by gently wiping outsides of caps with damp paper towel or brushing off any dirt with soft brush. Pop out stems by pushing them from side to side until they snap out. With teaspoon, scrape gills until undersides of caps are mostly clean. Place mushrooms on cookie sheet.
  • Brush both sides of mushrooms caps lightly with remaining 3 tablespoons oil; place top side down on cookie sheet. Stuff each mushroom cap with about 1/2 cup turkey mixture. Sprinkle with cheese.
  • Bake 25 to 30 minutes or until stuffing is browned and mushrooms are thoroughly cooked. Garnish with cilantro before serving.

12 ounces portabella mushroom caps (about 6 caps)
1 lb chorizo sausage, loose (I use Mexican Chorizo doubled)
3 ounces cheddar cheese, shredded
1 ounce green onion, chopped
1/4 cup red wine

Steps:

  • Mix together the chorizo, green onions, and cheddar cheese.
  • Stuff mushroom caps with the mixture evenly, place in a greased baking dish with the red wine.
  • Bake at 375 degrees Fahrenheit for 20-25 minutes or until sausage is cooked through and mushrooms are softened.

1/4 lb spanish chorizo, casing removed and then chopped
1 lb large white mushroom, cleaned
2 tablespoons extra virgin olive oil
1 medium onion, chopped
1 slice white bread, cut into 1/4 inch squares
1 ounce parmesan cheese, grated (you can use manchengo if you can find it)
1/4 cup flat leaf parsley, chopped
kosher salt & freshly ground black pepper, to taste

Steps:

  • Preheat the oven to 400 degrees F. Lightly oil a large baking pan.
  • Cut off the stems from the mushroom caps and then chop the stems. Place the mushroom caps stem side down, into the prepared pan. Bake for about 10 minutes, or until the mushrooms release their liquid.
  • Meanwhile, you can heat the olive oil in a skillet over medium heat. Then add the chorizo and cook it until it for about 3-4 minutes, or until it starts to brown. Take the chorizo out and reserve.
  • Reduce the heat to med-low and then add the onion, cooking for about 4-5 minutes, or until the onion gets soft. Add the chopped mushroom stems and cook another 3 minutes. Take out the veggie mixture and add it to the chorizo. Let cool.
  • Next, stir the bread, cheese and parsley into the chorizo and veggie mixture. Add salt and pepper to taste.
  • Turn the mushroom caps over and divide the chorizo mixture among them,making sure the mixture is mounded on each mushroom cap. Bake the caps for approximately 15 minutes, or until heated through.

This is an entree version of a traditional stuffed portobello mushroom appetizer. This is a gluten- and dairy-free version, however, feel free to use cheese(s) and breadcrumbs in place of the eggs, almond flour, and nutritional yeast. I used a sausage recipe from this site to make my own sausage out of ground turkey, again feel free to use your favorite ground sausage (chorizo would be lovely in this).

4 portobello mushroom caps
1 pound bulk sweet Italian sausage
¼ cup almond flour
¼ cup finely diced onion
2 large eggs
3 tablespoons nutritional yeast
2 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon dried parsley

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
  • Remove stems and gills from mushroom caps and wipe clean with a damp towel.
  • Combine sausage, almond flour, onion, eggs, nutritional yeast, garlic, Italian seasoning, and parsley in a bowl and mix well.
  • Divide sausage mixture into 4 portions and fill each mushroom cap, packing firmly. Place stuffed mushrooms in the baking dish.
  • Bake in the preheated oven until the center of the sausage mixture is cooked through and juices run clear, 45 to 60 minutes.
  • Remove baking dish from oven. Move oven rack about 6 inches from the heat source and turn on the oven's broiler.
  • Place mushrooms under the broiler until tops are colored, 3 to 6 minutes.
