CHRISSY TEIGEN'S MAC AND CHEESE

Chrissy Teigen's Mac and Cheese image

This baked macaroni and cheese recipe from Chrissy Teigen's cookbook is super creamy and the cheesy garlic bread crumbs put it over the top!

Provided by Chrissy Teigen

Categories     Main Course

Time 1h

Number Of Ingredients 17

8 slices white sandwich bread (torn into pieces)
6 cloves garlic (minced)
6 tablespoons unsalted butter
1 teaspoon kosher salt
½ teaspoon black pepper
5 tablespoons grated Parmesan cheese
1 pound pasta shells
1 teaspoon olive oil
½ cup unsalted butter
5 tablespoons all-purpose flour
5 cups whole milk
12 ounces cheddar cheese (shredded (3 cups))
12 ounces Swiss or Gruyere cheese (shredded (3 cups))
12 ounces American cheese (diced small)
2 teaspoons kosher salt
¼ teaspoon black pepper
¼ teaspoon cayenne pepper

Steps:

  • Preheat the oven to 425 degrees F. Grease a 9x13-inch baking dish with butter.
  • Make the Bread Crumbs: In a food processor, process the bread until it forms fine crumbs (you should have about 4 cups crumbs). In a large skillet, heat the butter over medium-low heat. When it foams, add the garlic and cook, stirring, until the garlic is fragrant but not browned, 1 to 2 minutes. Add the bread crumbs, increase the heat to medium, and cook, stirring frequently, until toasty and browned, 7 to 9 minutes. Stir in the salt and pepper, remove from the heat, and transfer to a large plate to cool for 5 minutes. Stir in the Parmesan cheese.
  • Make the Mac and Cheese: In a large pot of salted boiling water, cook the pasta according to the al dente directions on the package (if not included, cook for one minute less than called for). Drain, rinse, and toss with the vegetable oil to prevent sticking.
  • In a large saucepan or Dutch oven, heat the butter over medium-high heat until melted. Add the flour and cook, constantly whisking, until it turns a light and toasty brown color, 3 to 6 minutes. Gradually add the milk while whisking, then increase the heat to high and bring it to a boil. Reduce the heat to medium and cook, whisking, until it thickens, 4 to 5 minutes. Add the cheeses, a few handfuls at a time, and whisk the sauce until smooth. Whisk in the salt, black pepper, and cayenne. Stir in the cooked pasta, and season to taste with more salt and pepper.
  • Pour the mixture into the buttered baking dish and spread the bread crumbs evenly over the top. Bake until the topping is browned and crisp and the cheese is bubbling, about 8 minutes to 10 minutes. Leftovers can be stored, covered, in the refrigerator for up to 4 days.

CRISPY BAKED MACARONI AND CHEESE

Crispy Baked Macaroni and Cheese image

Provided by Food Network Kitchen

Time 50m

Yield 6 servings

Number Of Ingredients 12

6 tablespoons unsalted butter, plus more for the dish
Kosher salt
8 ounces mini penne pasta
1/4 cup all-purpose flour
2 cups whole milk
1 bay leaf
Pinch of cayenne pepper
1 1/2 cups grated monterey jack cheese (about 4 ounces)
1 1/2 cups grated gruyere cheese (about 4 ounces)
1 cup grated sharp cheddar cheese (about 3 ounces)
1/2 cup panko breadcrumbs
2 tablespoons grated parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F. Butter a shallow 2-quart baking dish; set aside. Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
  • Meanwhile, melt 4 tablespoons butter in a large saucepan over medium heat. Whisk in the flour and cook, whisking, until smooth and lightly browned, about 2 minutes. Gradually whisk in the milk until smooth. Add the bay leaf, cayenne and 1 teaspoon salt. Cook, whisking occasionally, until the sauce comes to a simmer and thickens slightly, 7 to 8 minutes.
  • Remove the bay leaf from the sauce and whisk in the monterey jack, gruyere and cheddar one cheese at a time, allowing each cheese to melt before adding more. Add the pasta and stir until coated, adding the reserved cooking water as needed to loosen (the sauce will thicken as it bakes).
  • Transfer the pasta mixture to the prepared baking dish. Melt the remaining 2 tablespoons butter in the microwave. Add the panko, parmesan and a pinch of salt; stir to combine. Scatter over the pasta and bake until the crumbs are browned and crisp, 15 to 20 minutes.

CHRISTY'S BAKED MAC-N-JACK

Christy's Baked Mac-n-Jack image

There are so many Mac-n-Cheese recipes on JAP that are delicious. This one is my specialty that everyone seems to love! I hope you and your family like it too!

Provided by Christy Lowrance @Christy122390

Categories     Pasta Sides

Number Of Ingredients 11

1 box(es) small shell macaroni
1 - velveeta cheese (small block)
1 stick(s) butter
1 1/2 cup(s) colby jack cheese (shredded)
1 cup(s) sour cream
1 cup(s) cottage cheese (small curd)
2 tablespoon(s) mustard
1 cup(s) milk
- kosher salt & pepper to taste
2 cup(s) monterey jack cheese (shredded)
- paprika

Steps:

  • Preheat oven to 350.
  • In a large sauce pan, boil macaroni according package. Drain and return to pan. Add remaining ingredients (except Monterey Jack/Paprika)and mix well until all cheese is melted.
  • Pour into 13x9 pan. Sprinkle Monterey Jack cheese over top and then generally dust with paprika.
  • Bake for 40 minutes and let stand for 15 minutes before serving.

Tips:

  • Use a good quality cheese: A sharp cheddar cheese will give you the best flavor, but you can use any type of cheese that you like. If you are using a mild cheese, you may want to add some extra spices to the dish.
  • Cook the macaroni al dente: This means that the macaroni should be cooked until it is tender, but still has a little bit of bite to it. If you overcook the macaroni, it will become mushy and the dish will not be as good.
  • Make sure the sauce is thick and creamy: The sauce should be thick enough to coat the macaroni, but not so thick that it is difficult to stir. If the sauce is too thin, you can add some cornstarch or flour to thicken it.
  • Don't be afraid to experiment: There are many different ways to make mac and cheese, so don't be afraid to experiment with different ingredients and flavors. You can add vegetables, meat, or even seafood to the dish. You can also use different types of cheese or spices to create a unique flavor.
