1 small onion, chopped
1 garlic clove, minced
2 tablespoons butter

1 jar (4 ounces) sliced mushrooms, drained

4 cups vegetable broth or chicken broth
1 can (12 ounces) evaporated milk

1/2 large clove garlic, finely chopped, plus 1/2 large clove garlic
1 medium Yukon gold or Russet potato (about 8 ounces), peeled and diced (about 1 cup)

  • Bring 6 cups water to a boil in a medium saucepan; season with 2 teaspoons salt. Add asparagus tips and blanch until bright green and just tender, 2 to 3 minutes. Transfer to an ice bath with a slotted spoon; reserve for topping.
