You can put in the raisins and the cranberries or one or none. It is up to your taste buds! For my tastes, I put in both. :) **Update Mar 30/08 - After the last time I made this, I threw the leftovers into a jar and popped it into the freezer. Then the next holiday, I just set it on the counter for the afternoon. Dumped some out for dinner and threw it back into the freezer. It was just as good the second time around as it was when it was made fresh.

1 1/2 cups marmalade (Sugar free works well)
0.5 (12 ounce) can orange juice concentrate (Five Alive works great)
1/4 cup golden raisin
1/4 cup dried cranberries
1 cinnamon stick, broken in half
1 (12 ounce) package fresh cranberries (about 3 cups)

Steps:

  • Mix marmalade, juice concentrate, raisins (and dried cranberries if using) and cinnamon stick in a saucepan, bring to boil.

16 ounces cranberries
1 cup chopped apple
1 cup chopped walnuts
1/2 cup raisins
1/4 cup Grand Marnier
1/2 orange, juice of
1/2 lemon, juice of
1 teaspoon cinnamon
1 teaspoon nutmeg

Steps:

  • Combine the sugar and water in a large saucepan and bring to a boil.
  • Add the cranberries and return to a boil, before lowering the heat so that the liquid simmers.
  • Add the apples, walnuts, raisins, Grand Marnier, orange and lemon juices, cinnamon, and nutmeg, and cook for 10 to 15 minutes.
  • Remove the pan from the heat and let the sauce cool.

It does not "gel" but you do want to cook it long enough to make a good, thick consistency. You can use 1 tablespoon of excellent quality ground cinnamon instead of the cinnamon stick, if you prefer. 2 pounds cranberries
2 tablespoons orange zest
3 cinnamon sticks
1 pint orange juice
2 cups packed brown sugar
2 cups water

Steps:

  • Place the cranberries, grated orange rind, cinnamon, orange juice, brown sugar and enough water to cover cranberries in a saucepan. Bring mixture to a boil over high heat. Immediately turn heat down and simmer for about 1 hour or until the sauce has thickened. Taste for sweetness and adjust with additional sugar if necessary.
