This is a wonderful spin on the Green Chile Recipes for Green Chile LOVERS, like me! Very rich and CHEESY and creamy, to be used as a dip or over enchiladas! My husband is from New Mexico and introduced me to this HOT lil number 10yrs ago, and I always loved heat, but Green Chili is unlike not other. One of our favorite restaurants here in San Antonio is Chuys! We have little ones so going out for a sit down dinner isn't always on the menu, so desperate times called for desperate measures!

10 corn tortillas
1 1/4 lbs cooked chicken
1/2 cup vegetable broth
1/4 cup water
salt and pepper
3/4 lb roasted green chilies
2 ounces tomatillos
1 1/2 ounces cilantro
1 ounce green onion
3/4 ounce serrano pepper
1/2 ounce lime juice
1 1/4 lbs American cheese

Steps:

  • In a saucepan, add vegetable broth, water and spices and place over a medium to high flame. Using a food processor, puree roasted green chilies, tomatillos, cilantro, green onions, serranos and lime juice.
  • Add to saucepan, stirring in well. Bring mixture to a slow boil. Lower flame and slowly add American cheese, whipping as needed to remove clumps and make sure it doesn't stick to the bottom. When the cheese is melted and mixed, remove from heat.
  • To make enchiladas, fill a corn tortilla with 2 ounces of cooked, roasted chicken. Roll up and place in a baking pan. Top with mixed cheese, as needed. Warm in a hot oven for 4 minutes, until cheese is melted. Top with Boom-Boom Sauce.

These enchiladas have long been a staple at Chuy's Tex-Mex, which started down in Austin back in 1982. The restaurants are all cool Tex-Mex joints stuffed-full of Americana Fifties chic. Now you can serve these hip enchiladas around your home's own Elvis shrine.

¾ cup roasted green chiles
2 oz. tomatillos
1 ½ oz. cilantro
1 oz. green onions
½ cup vegetable broth
¼ cup water
1 ¼ teaspoons salt
1 ¼ teaspoons pepper
10 corn tortillas (6-inch)
vegetable oil
1 ¼ cups shredded American cheese
1 ¼ cup cooked roasted chicken

Steps:

  • Preparation: Preheat oven to 350°F. Spray a 7x11-inch baking dish with cooking spray. The sauce: In large saucepan or Dutch oven, brown ground beef with onions, garlic powder, salt and pepper. Drain. Add broth, tomatoes, chili powder, paprika and cumin. Mix well, breaking up tomatoes with large spoon. Bring to a boil. Reduce heat and simmer uncovered one hour. In small bowl, mix cornstarch and water until cornstarch is completely dissolved. Gradually add to chili sauce, stirring constantly. Continue cooking five minutes. The Filling: Heat about one-half inch oil in small skillet, until hot but not smoking. Quickly fry each tortilla in oil to soften, about two seconds on each side. Drain on paper towels. In large bowl, combine cheddar cheese and onion. Mix well. Spoon 1/3 cup cheese mixture down center of each tortilla. Roll up and place seam side down in two 11 x 7-inch baking dishes. Top with chili sauce. Cover with foil. Bake ten minutes or until hot. Remove foil. Sprinkle with American cheese. Continue baking two minutes or until cheese melts. Makes eight servings.

12 ounces ground beef
1 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/2 small yellow onion, finely diced
32 ounces low-sodium beef broth
Two 14-ounce cans whole tomatoes
1 tablespoon tomato paste
1 tablespoon chili powder
2 teaspoons paprika
2 teaspoons ground cumin
6 dashes hot sauce, such as Cholula
Kosher salt
1/4 cup cornstarch
Twelve 6-inch flour tortillas
8 ounces Cheddar cheese, grated
8 ounces jack cheese, grated
6 ounces processed cheese, grated

Steps:

  • In a large skillet over medium-high heat, cook the ground beef, garlic powder, black pepper and onion, crumbling the beef as you cook it, until well browned, 5 to 7 minutes. Transfer with a slotted spoon to a paper towel-lined plate. Pour off any excess grease but do not clean the skillet.
  • To the same skillet, add the beef broth, tomatoes, tomato paste, chili powder, paprika, cumin, hot sauce and some salt. Smash the tomatoes into small bits as you stir. Bring the mixture to a boil, then reduce to a simmer. Use an immersion blender to puree the sauce. Simmer for 1 hour.
  • After 1 hour, mix the cornstarch with 1/4 cup water in a small bowl. Add the slurry to the sauce. Raise the heat to medium high and let it boil and thicken for 3 minutes. Return the beef to the pan and stir.
  • Preheat the oven to 350 degrees F. Soften the tortillas in the microwave, wrapped in a paper towel, for 15 to 45 seconds, depending on your microwave.
  • Mix together all 3 cheeses in a bowl. Place a couple of tablespoons of cheese in the center of each tortilla, making a line down the center. Roll each tortilla up and place it seam-side down in a 9-by-13-inch pan. Once all the tortillas are in the pan, spoon or ladle the sauce over the top of them. Top with the leftover cheese and bake until bubbly, about 18 minutes.
  • To make ahead: Assemble the tortillas in the pan and cover with plastic wrap. Put the cooled sauce in an airtight container. Keep the extra cheese for topping in another container. Throw everything into the fridge. When ready to cook, top the tortillas with the sauce and cheese and bake!

These are authentic Tex-Mex enchiladas as taught to me by a lady originally from Chihuahua, Mexico who then added a bit of Texas. They are super easy to put together and taste incredible! Watch out though, because there is nothing low-fat about them! I like to assemble these enchiladas in the morning or night before, come home and pop them in the oven. When cold, add 10 more minutes to the baking time. Leave out the onions for picky eaters.

2 (11.25 ounce) cans chili without beans
1 cup enchilada sauce
½ cup vegetable oil
1 tablespoon chili powder
15 corn tortillas

1 tablespoon ground cumin

4 cups water
½ cup all-purpose flour, divided
1 ½ teaspoons sugar
2 tablespoons cooking oil
12 (6 inch) corn tortillas
4 cups shredded American cheese

  • Preheat the oven to 350 degrees F (175 degrees C).
