HOMEMADE APPLE CIDER BEEF STEW

Homemade Apple Cider Beef Stew image

It's especially nice to use this recipe in fall, when the weather gets crisp and Nebraska's apple orchards start selling fresh apple cider. This entree's subtle sweetness is a welcome change from other savory stews. We enjoy it with biscuits and slices of apple and cheddar cheese. -Joyce Glaesemann, Lincoln, Nebraska

Season to taste with salt and pepper. DO AHEAD: Stew can be made 1 day ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep chilled. Simmer stew over medium heat to rewarm before serving.
  • Divide stew among bowls, sprinkle with remaining 1 teaspoon sage, and serve.

CIDER STEW

Cider Stew image

I got this recipe a long time ago from a book called, "Great Recipes From The New York Times." It's one of my most requested recipes. The sauce is delicious, especially sopped up with some fresh, crusty bread, and I always double the sauce and seasoning ingredients when I make it. The stew comes out great anytime, but even moreso during apple season when fresh cider is available, since the better the cider, the better the stew. Hope you enjoy it. (Note that the recipe calls for bacon grease. However, I prefer using a half and half mixture of vegetable or olive oil and butter).

Provided by Charmed

Categories     Stew

Time 3h10m

Yield 6 serving(s)

Number Of Ingredients 12

1 1/2 tablespoons olive oil (see note)
1 1/2 tablespoons butter (see note)
3 large onions, sliced
3 tablespoons flour
1 teaspoon salt
1/2 teaspoon thyme
2 lbs stewing beef
pepper
1 tablespoon ketchup
2 cups good quality apple cider
3 large potatoes, cut in chunks
3 large carrots, sliced thick

Steps:

  • On a medium to medium-high heat, in a large skillet or dutch oven with a cover, heat the fat and cook the onions until browned.
  • While the onions are browning, mix the flour with the salt, pepper and thyme.
  • When onions are browned, remove them from the pan, set aside, and add the beef.
  • When the beef browns, replace the onions and add the flour mixture.
  • Stir to coat all.
  • Add the cider and ketchup, and bring to a boil, stirring occasionally.
  • Then lower the heat and simmer for 1 1/2 hours more, stirring occasionally and skimming the top of the stew if necessary.
  • Add the potatoes and carrots and simmer another 30 to 45 minutes, until the vegetables are tender.
  • NOTE: The original recipe called for 3 tbs. bacon grease, but I prefer not using that. The butter and olive oil mixture gives excellent results.
  • Also, I always double the sauce& seasoning ingredients. If you decide to also, don't forget to double the onions, oil, butter and flour also.

TINK'S CIDER BEEF STEW WITH FLUFFY DUMPLINGS

Tink's Cider Beef Stew With Fluffy Dumplings image

I used to use a basic cider stew recipe, but one day about 25 years ago, I went to make it and found I was out of apple cider. I did have a packet of spiced cider mix, from a holiday gift basket, though. My family loved it, so I experimented further with the recipe. I've been buying the spiced cider packets ever since, just for stew. I find it year round, usually on the top shelf of the unrefrigerated juice aisle, at the grocery store. We've tried many other good stew recipes over the years, but this is the one, with its fluffy dumplings, that my family calls comfort food. The dumplings are optional, and I still use the recipe found in my first Betty Crocker cookbook.

Categories     One Dish Meal

Time 2h30m

Yield 6-8 serving(s)

Number Of Ingredients 22

1 1/2 lbs beef stew meat, cut into 1-inch cubes
2 tablespoons flour
salt and pepper (to taste)
1 -2 tablespoon vegetable oil
1 (3/4 ounce) packet spiced apple cider
3 cups water
26 ounces beef stock (or broth)
2 tablespoons apple cider vinegar
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
1 large potato, peeled and cubed
12 baby carrots, cut into 1/2-inch pieces
2 stalks celery, cut into 1/2-inch pieces
1 medium onion, cut into 1/2-inch pieces
1/4 cup flour
1/2 cup cold water
1 1/2 cups flour (for self-rising flour, omit baking powder and salt)
2 teaspoons baking powder
3/4 teaspoon salt
3 tablespoons shortening
3/4 cup milk

Steps:

  • In a large resealable bag, shake together stew meat, flour, salt and pepper. Heat vegetable oil in large Dutch oven, and brown beef in oil. Drain, if needed.
  • Add spiced cider packet, water, beef stock, apple cider vinegar, salt, pepper, and thyme. Bring to a boil, reduce heat, cover and simmer 1-1/4 hours.
  • Add potato, carrots, celery, and onion. Return to a boil, then reduce, cover, and simmer 30 minutes, or until meat and veggies are tender.
  • Combine flour and cold water. (I like to shake it in a jar with a sealed lid.) Raise heat to high; slowly pour flour and water into stew, while stirring constantly. As the mixture heats it will thicken into gravy. Thicken as much or as little as you like. You may or may not use all of the flour/water mixture.
  • Make dumplings: Combine flour, baking powder and salt in a small bowl. Using a pastry blender or two knives, cut the shortening into the flour mixture until it resembles fine crumbs.
  • Stir in milk, and drop 10 spoonfuls of dough onto hot meat or vegetables (not directly onto hot liquid).
  • Cook uncovered for 10 minutes.
  • Cover and cook 10 minutes longer.

CIDER CHICKEN STEW

Categories     Soup/Stew     Chicken     Dinner

Yield 4-5

Number Of Ingredients 19

1 can Crispin Browns Lane Cider (16.9 oz)
1 1/4 lb. skinless, boneless chicken thighs, chopped into 1 in. chunks
3/4 lb. skinless, boneless chicken breast, chopped into 1 in. chunks
3 c. unsalted chicken stock
1 1/2 lb. Yukon Gold Potatoes, peeled and quartered
2 c. parsnip, peeled and cut into 1 in. chunks
2 c. acorn squash, peeled and cut into 1 in. chunks
8 oz. crimini mushrooms, sliced thin
4 ribs of celery, sliced thin
4 medium carrots, peeled, quartered lengthwise and chopped
2 large shallots, finely chopped
3-4 cloves garlic, minced
Small bundle of fresh thyme
3-4 bay leaves
1/3 c. flour (for dredging chicken), plus 1 tbsp.
5 Tbsp. olive oil
Salt & Pepper
4 Tbsp. heavy cream
3 Tbsp. butter

Steps:

  • Prep veggies & chicken, following above instructions. Heat a dutch oven over medium high heat with 1 Tbsp. oil. Saute mushrooms about 5 min. until tender. Remove from pan,set aside. Add another 2 Tbsp. oil to the pan. Add shallots, garlic, carrots, and celery. Add a 1/2 tsp. salt & pepper. Stir occasionally until the veggies are tender, about 10 min. Remove from pan, set aside. Dredge the chicken bits in the 1/3 c. flour, shake off excess. Working in two batches, heat 1 Tbsp. oil in the pan and cook chicken until browned and fully cooked, about 6 min. each batch. Add a little salt and pepper to season. Remove and set aside. Pour in the whole can of Crispin Browns Lane. Using a flat edged spatula, gently scrape up the browned bits from the bottom of the pan and sides. Add the thyme and bay leaves. In a small bowl, combine 1 c. chicken broth and 1 Tbsp. flour, whisk until there are no lumps. Add to pot along with another 2 cups chicken broth. Bring the pan to a boil and add back in the chicken and cooked veggies (not mushrooms though). Cover, reduce to a simmer and cook 40 mins. Once the 40 mins. is up, stir in the squash, parsnips, and mushrooms. Simmer uncovered for about an hour. What you should be looking for after an hour is a thicker sauce and tender veggies. When your stew is close to finishing up, start your potatoes. Peel and chop your pots and place them into a large pan, add 1/2 tsp. salt, cover with water. Cover pot and bring water to a boil; cook until the potatoes are very tender, 20 minutes or so. When finished, pour out water, add butter, cream, salt and pepper (to taste), and mash.

GAME STEW WITH CIDER AND APPLES

Game Stew With Cider and Apples image

I had this in a medieval knight's pub in Torquai ten years ago. The cider is not apple juice like it would be in the US but actually it's British alcoholic cider. Not Strongbow, though, but some sweeter cider with only 4 percent alcohol. For the game use any mix of rabbit, hare, partridge, pheasant and venison or if you don't have game use chicken, beef, rabbit.

1 red pepper, de-seeded & sliced
2 cooking apples, peeled, cored & thickly sliced
salt & black pepper
2 tsp cornflour blended in a little cold water, until smooth
3 Tbsp single cream

Steps:

  • 5. Leave to cool for about 5 minutes, then stir in the cream. Gently heat through. Serve with unpeeled new potatoes or mashed potato.

Tips:

  • Choose the right apples for your stew. Some good options include Granny Smith, Honeycrisp, and Braeburn.
  • Peel and core the apples before adding them to the stew. This will help to prevent the stew from becoming too tart.
  • Use a variety of spices in your stew. This will add depth of flavor and make the stew more interesting.
  • Cook the stew on low heat for a long period of time. This will help to tenderize the meat and vegetables.
  • Serve the stew with a side of bread or dumplings. This will help to soak up the delicious sauce.

Conclusion:

Cider stew is a hearty and flavorful dish that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. Whether you like your stew sweet, savory, or spicy, there is a cider stew recipe out there for you. So next time you are looking for a comforting and delicious meal, give cider stew a try.
