Time 1h10m

Yield 24

Number Of Ingredients 8

6 squares of chocolate Almond Bark
½ heaping cup crushed cocktail peanuts
2 Tbsp peanut butter
¼ cup butter, softened
1¾ cup powdered sugar
⅓ cup finely chopped maraschino cherries, patted dry as possible with a paper towel
2-3 tsp of maraschino cherry juice, only if absolutely needed
24 mini muffin paper liners

Steps:

  • First, line the mini muffin pan with paper liners. Set aside.
  • Then, line a cookie sheet with wax paper. Set aside.
  • Next, in a small bowl, combine softened butter and powdered sugar. Using a hand mixer, beat until it starts to stick together. It will be clumpy.
  • Add patted-dried, chopped maraschino cherries. Mix well. IF the mixture is still clumpy after adding the chopped cherries, add a half tsp of maraschino cherry juice and mix again. If needed, add another half teaspoon and so on. You do not want this to be the consistency of frosting. You want to keep it as thick as possible.
  • Using a tablespoon-size cookie scoop or small spoon, scoop cherry mixture onto lined cookie sheet an inch apart. Place in freezer for at least one hour.
  • Next, while cherry drops are freezing, follow the instructions on the package to melt Almond Bark in a microwave-safe bowl. Once melted, add crushed peanuts and peanut butter. Mix well.
  • Then, drop a small amount of the Almond Bark mixture into the bottom of each liner, just enough to cover the bottom of the liner.
  • Take cherry drops out of the freezer and break each one in half. (You only want the cherry centers to be about ½ Tbsp). Form the halved drops into a circular disk and place one on top of each Almond Bark mixture already in the pan.
  • Afterward, top each cherry drop with a spoonful of the Almond Bark mixture.
  • Allow to cool completely and set up before eating.
  • Can be stored at room temperature for up to 10 days.

CHERRY MASH BARS

Cherry Mash Bars image

These ultra sweet bars are always a year-round request, even though I usually only make them at Christmas time. They are very easy to make, and quick! If cherry chips aren't available in your area, butterscotch chips can be substituted.

CIN MADE ''CHERRY MASH''

Cin Made ''Cherry Mash'' image

Pretty and delicious... what a combo! Brighten up your candy bowl with this lovely dish.

Number Of Ingredients 10

1/2 cup(s) butter or margarine ( i use butter)
2 cup(s) granulated sugar (can be made with splenda)
2/3 cup(s) evaporated milk
- dash of salt
- 12 large marshmallows
1 package(s) (10 oz) cherry chips
1 teaspoon(s) pure vanilla
1 package(s) (12 oz) chocolate chips
3/4 cup(s) peanut butter ( i use skippy-extra crunchy); ( i use a little more )
1 package(s) (12 oz) crushed peanuts

Steps:

  • Combine butter or margarine, sugar, milk, salt and marshmallows in saucepan. Bring to a boil then boil for 5 minutes.
  • Remove from heat and stir in cherry chips and vanilla. * Pour into a buttered 9 x 13 baking dish and chill for 2 hours.
  • In a double boiler, melt chocolate chips. Add peanut butter and crushed peanuts. Stir until well blended. Spread evenly over the cherry layer. Chill until firm enough to cut into bite size pieces.
  • * I line the 9 x 13 baking dish with aluminum foil (butter the foil) so that I could lift the candy out of pan when set, that way it would be easier to cut into squares.
  • Lot and Lots of you have asked what is a "Cherry Chip"....yes, it's just like buying a bag of Chocolate, Butterscotch, Peanutbutter...etc. Chips. I use Log House premium quality CHERRY flavored Baking Morsels. There is a photo above by Karla showing the cherry chips in a bag...=;D
  • NOTE: If you want your candy squares thick like this pic, then make it in a 8x9-inch pan (instead of a 9x13...you get more pieces using the larger pan, but the squares won't be as thick).
  • and above is a pic of...the original 'CHERRY MASH' candy bar
  • Kim's photo's above, without putting in the crushed NUTS...made a beautiful "fudge". She also has a photo above when she remade it and put the nuts in...beautiful.
  • and...WHEN I USE SPLENDA, to make this candy, I USE Hershey's Sugar-Free Chocolate Chips.
  • ADDING A NOTE FROM CARY BOWERS: For those of us that can't find the Cherry Chips in the local grocery store. Trust me I went to every one here in my area. There is a way you can still make this awesome candy with out them. I went to my local Walmart store in the isle with spices and extracts look for Watkins Cherry extract. I used the white chocolate chips and then added four capfulls' of the extract and red food coloring if that is important to you. You can also add the flavoring to taste. I will post a picture of it when I am done. The Cherry part is chilling now then on to the top ;) This has been a fave of my husband and I have loved this since we were kids. Glad I found a good recipe. Thank you ************************************ P.S. Cary did add her pictures...check out all the pictures and you will no only see mine but you will see all of the pictures of those who made this recipe and posted there photos!!! P.S.S. Also, I want to thank Cary for all her work turning this recipe into one that anyone can make, no matter whether they can find the "cherry chips" or not!!!

Tips:

  • Choose ripe cherries: Use fresh, ripe cherries for the best flavor. Avoid cherries that are bruised or have soft spots.
  • Pit the cherries: Use a cherry pitter to remove the pits from the cherries. This will make it easier to mash the cherries and will prevent the pits from getting stuck in your teeth.
  • Use a food processor: A food processor is the best way to mash the cherries. It will quickly and easily create a smooth, consistent mash.
  • Add sugar and lemon juice to taste: The amount of sugar and lemon juice you add to the cherry mash will depend on your personal preference. Start with a small amount and add more to taste.
  • Chill the cherry mash before serving: Chilling the cherry mash will help to firm it up and make it more refreshing.
  • Serve the cherry mash with your favorite toppings: Some popular toppings for cherry mash include whipped cream, ice cream, and chopped nuts.
