My girls love all things related to a cinnamon roll, from the swirling and soft cinnamon-speckled dough to the sticky-sweet icing that slicks the top. One morning, Charlotte was begging me for cinnamon rolls but I didn't have time to make them, so I decided to put the flavors of a cinnamon roll into my trusty quick popover recipe. It couldn't have been easier. There is just enough cinnamon sweetness to scratch that cinnamon bun itch for both kids and adults.

Yield Makes 12 Popovers

Number Of Ingredients 9

2 large eggs
2 tablespoons granulated sugar
1 cup 2% milk, warmed, plus 2 tablespoons
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
2 tablespoons unsalted butter, melted
1/4 cup reduced-fat cream cheese (Neufchatel), at room temperature
1/4 cup confectioners' sugar

Steps:

  • Place a 12-cup muffin tin on the middle rack in the oven and preheat the oven to 400 degrees F.
  • Add the eggs and granulated sugar to a blender jar and mix on medium speed until light yellow. Add the 1 cup warmed milk and blend. Add the flour, cinnamon, and salt and blend until smooth.
  • Use a pastry brush to grease the hot muffin tin generously with the melted butter. Add any remaining butter to the batter and pulse to blend. Pour the batter into the warmed muffin tin, filling the muffin cups about three-quarters full. Bake until the popovers are golden, about 20 minutes. (Do NOT open the oven door!) Turn off the oven, keep the oven door closed, and continue to bake the popovers until golden brown, 10 to 15 minutes.
  • Meanwhile, in a small bowl, whisk the cream cheese with the confectioners' sugar and the remaining 2 tablespoons milk until smooth. Remove the popovers from the oven. Use the tip of a paring knife to poke a tiny slit at the top of each popover (this will allow steam to escape, and will keep your popovers from getting soggy). Brush the popovers with the glaze and serve warm.

This is a great way to serve popovers for breakfast. A nice change from the refrigerated biscuits or frozen bread dough done this way in the cinnamon sugar. This recipe is approved by my family and friends at Sunday brunch...hope you give it a try.

BATTER:
2 c milk, room temperature
6 large eggs, room temperature
2 Tbsp melted butter
2 1/4 c all purpose flour
1 tsp salt
1 tsp baking powder
TOPPING:
1/2 c butter, melted
1 c granulated sugar
1 1/2 Tbsp ground cinnamon
combine cinnamon and sugar, set aside.

Steps:

  • 1. Heat oven to 400^. Place popover pan in oven for 10 minutes while mixing up batter.(custard cups may be used if you don't have a popover pan.
  • 2. In a bowl whisk together the eggs and the milk and add the butter. Set aside. In another bowl whisk the flour, salt, and baking powder. When mixed combine the flour mixture to the egg mixture..whisking vigorously until smooth(can use blended for this ,if desired). After mixing let batter rest for 20 minutes.
  • 3. Remove popover pan from oven and turn oven down to 350^. Place 1 teaspoon of butter in the bottom of each cup, then ,spray popover pan generously with non stick butter spray and place on a baking sheet. Fill popover cups almost to the top with batter.3/4 full.
  • 4. Bake at 350^ for 15 minutes. Turn oven down to 325^ and bake for another 25 minutes or until popovers are golden brown. UNDER NO CIRCUMSTANCES OPEN THE OVEN DOOR OR THEY WILL NOT POP UP EVEN AS THEY TURN GOLDEN BROWN HALFWAY THROUGH BAKING. Remove from oven and poke tops with a sharp knife to expel steam. Remove from pan and cool on a wire rack.
  • 5. When cool to the touch brush each popover with melted butter and roll them in the cinnamon/sugar until coated well all over... Enjoy...

MINI CINNAMON SUGAR POPOVERS

1 cup flour
1/4 cup sugar
1/2 tsp cinnamon
1/4 tsp salt
1 1/4 cups milk, room temp.
2 eggs
5 tbs butter, melted
1/3 cup sugar + 1/2 tsp cinnamon, combined

Steps:

  • Preheat over to 450. Grease mini muffin tin and sprinkle cinnamon sugar in each tin. Whisk together flour, sugar, slat, and cinnamon until there are no lumps. In large measuring cup, mix milk, eggs, 2 tbsp butter, and stir into dry ingredients until just combined. Pour into tins and sprinkle more cinnamon sugar on top. Bake 10 minutes. After 10 minutes, reduce heat to 350, and continue to bake for another 8-10 minutes. Brush with remaining melted butter. Sprinkle with cinnamon sugar.

3 eggs
1 cup milk, room temp
1 cup bread flour
2 1/2 tablespoons unsalted butter, melted
1/2 teaspoon salt (I add 1/4 for lower sodium diets)
1 teaspoon cinnamon
vegetable shortening for greasing pans.

Steps:

  • Combine and whisk dry ingredients and wet ingredients separately. Put together and whisk well. Mix will be runny, cover and let sit while you preheat oven 400 degrees (~ 10 min). Heat non-stick popover or small muffin pan for 2-5 minutes in oven. Carefully take out and grease pan (if not non-stick). Fill cups half full and bake for 40 minutes. Do not open oven. Serve immediately, hot, with butter and selection of jams.

Tips:

  • Use high-quality ingredients. The better the ingredients, the better the popovers will be. Use fresh eggs, milk, and butter.
  • Make sure the oven is preheated to the correct temperature. If the oven is not hot enough, the popovers will not rise properly.
  • Do not open the oven door during baking. Opening the oven door will cause the popovers to deflate.
