Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Time 1h10m

Yield Makes 48

Number Of Ingredients 9

2 3/4 cups all-purpose flour (spooned and leveled)
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened but still slightly firm
1 2/3 cups sugar, plus 1/4 cup for topping
1 large egg
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees. In a medium bowl, whisk together flour, cream of tartar, baking soda, and salt; set aside. With an electric mixer, cream butter and 1 2/3 cups sugar until light, scraping down sides of bowl as needed. Add egg and vanilla; beat until combined. Add flour mixture; beat, scraping bowl as needed, until dough comes together when squeezed (it will appear dry).
  • Make the topping: In a small bowl, mix together remaining 1/4 cup sugar and cinnamon.
  • Shape dough. Scoop 48 level tablespoons. Squeeze each tightly with fist; roll into balls. Roll balls in topping to coat evenly. Place 1 1/2 inches apart on baking sheets; flatten with bottom of a glass. Sprinkle tops with remaining topping (there may be excess).
  • Bake, one sheet at a time, until tops are puffed and crackly, and bottoms are golden brown, 10 to 12 minutes. Cool slightly on sheets; transfer to a rack to cool completely.

Tips for Using Cinnamon Sticks in Recipes

  • Choose high-quality cinnamon sticks. Look for sticks that are smooth, unblemished, and have a deep reddish-brown color. Avoid sticks that are cracked, splintered, or have a dull appearance.
  • Use a microplane or zester to grate cinnamon sticks. This will create a fine powder that can be used in both sweet and savory dishes.
  • Add cinnamon sticks to your favorite tea or coffee. This will add a warm, spicy flavor to your beverage.
  • Use cinnamon sticks to make a simple syrup. Combine equal parts sugar and water in a saucepan over medium heat. Bring to a simmer and stir until the sugar has dissolved. Remove from heat and add cinnamon sticks. Let cool completely before using.
  • Add cinnamon sticks to your favorite baked goods. This will add a warm, inviting flavor to your cakes, cookies, and pies.
  • Use cinnamon sticks to flavor rice dishes. Add a few cinnamon sticks to your pot of rice while it is cooking. This will give the rice a subtle, warm flavor.
  • Use cinnamon sticks to make a savory spice blend. Combine cinnamon sticks with other spices, such as cumin, coriander, and chili powder. This blend can be used to flavor meat, vegetables, and stews.

Conclusion

Cinnamon sticks are a versatile spice that can be used to add flavor to both sweet and savory dishes. They are a great way to add a warm, inviting flavor to your favorite recipes. So next time you're looking for a way to spice up your cooking, reach for a cinnamon stick. You won't be disappointed.
