  • Arrange racks in upper and lower thirds of oven; preheat to 400°F. Line 2 rimmed baking sheets with parchment. Mix sugar, cinnamon, and salt on a large plate. Fill a small bowl or glass with cold water.
  • Roll out pastry between 2 sheets of parchment until short side is 10" long and dough is about 1/8" thick. Freeze dough 5 minutes. I love cinnamon rolls, but hate how much time and effort they take. These twists are ready in a fraction of the time and taste just like a cinnamon roll!

1 (13.8 oz) tube refrigerated pizza dough (or your favorite homemade pizza dough - I used Pillsbury brand)
3 tablespoons granulated sugar
2 tablespoons brown sugar
1 1/2 teaspoons cinnamon
3 tablespoons butter, melted
2 tablespoons butter, melted
1 cup powdered sugar (more or less, depending on how thick you want your frosting)
1 tablespoon milk
1/2 teaspoon vanilla extract

12 tablespoons (1 1/2 sticks) unsalted butter
1 1/2 cups sugar
3 tablespoons brandy
1 tablespoon freshly squeezed lemon juice

Caramel Sauce, recipe follows
1/4 cup coarsely chopped peanuts
1/2 sheet frozen puff pastry, thawed
2 tablespoons unsalted butter, melted
1/4 cup sugar
1 teaspoon cinnamon
2 1/2 cups sugar
1/2 cup water
1 cup heavy cream

Steps:

  • Peel and core the apples, leaving them whole. Cut the tops and bottoms off the apples to give them flat surfaces to rest on. In a skillet, melt the butter over medium heat. Stir in the sugar and cook over medium-high heat, stirring, until the mixture begins to turn golden brown and caramelized. Add the brandy and lemon juice and stir to blend. Adjust the heat so the mixture remains at a simmer. Place the apples in the liquid and simmer until the submerged portion is tender, about 15 minutes. Turn the apples over and cook until tender all the way through, about 15 minutes more. Remove from the liquid and set aside to cool.
  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment or buttered waxed paper. Unroll the puff pastry on a work surface and brush the pastry with melted butter. In a small bowl, toss together the sugar and cinnamon and sprinkle evenly over the pastry. Working lengthwise, cut the pastry into 6 even strips, each 3/4-inch wide. Twist the strips, keeping the cinnamon sugar on the inside, to make long twisted "straws."   • To serve, place an apple on each serving plate. Drizzle with caramel sauce, sprinkle with peanuts, and place a pastry straw in the hole of each apple so that it sticks up like a wooden stick.

3 cups all-purpose flour, plus more for dusting
1/2 cup plus 2 tablespoons granulated sugar
1 teaspoon salt
1 1/4 sticks (10 tablespoons) cold unsalted butter, cut into pieces
Vegetable oil, for the bowl
3/4 cup red sanding sugar
2 1/2 teaspoons ground cinnamon

Steps:

  • Pour the water into a small bowl, sprinkle the yeast on top and stir. Let stand until foamy, 5 minutes. Meanwhile, whisk the flour, 2 tablespoons granulated sugar and the salt in a large bowl. Work in the butter with your fingers until fine crumbs form. Make a well in the middle and pour in the yeast mixture. Stir until the mixture comes together into a shaggy dough. 1 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
oil (for frying)

Steps:

  • Dissolve yeast in warm water in a large bowl.
  • In a saucepan, combine the milk, sugar, salt, cinnamon and butter.

1 cup sour cream
1/4 cup honey
3 tablespoons butter
1/8 teaspoon baking soda
1 teaspoon salt (optional)
1 (1/4 ounce) package dry yeast
1 teaspoon honey
1/2 cup lukewarm water
2 beaten eggs
4 cups whole wheat flour
12 tablespoons softened butter
3/8 cup honey
1 1/2 tablespoons cinnamon

Steps:

  • In a saucepan, heat the sour cream, honey, butter, soda, and salt-but do not boil. Let cool to lukewarm.
  • Dissolve the yeast and the honey in the lukewarm water. Stir into the lukewarm mixture from Step 1.
  • Add the beaten eggs and flour to the cooled mixture. Knead on a lightly floured board and knead for 5 minutes.
  • Roll out the dough to a 16 x 16 inch square. Mix in the butter, honey, and cinnamon and spread on dough. Fold into thirds and cut into 16 1-inch strips. Twist each strip and lay on a cookie sheet covered with parchment paper. Cover lightly and let rise in a warm spot for about an hour.
  • Bake at 350'F for about 25 minutes.
  • When they're done, they may be frosted with your favorite icing, If you like.

1 tablespoon plus 1-1/2 cups sugar, divided
1/4 cup warm water (110° to 115°)
1 package (1/4 ounce) quick-rise yeast
3-1/2 cups all-purpose flour
1-1/2 teaspoons salt
1/2 cup cold butter, cubed
1/2 cup shortening
1/2 cup sour cream
2 eggs, lightly beaten
1 teaspoon vanilla extract
2 teaspoons ground cinnamon

Steps:

  • In a small bowl, dissolve 1 tablespoon sugar in warm water. Add yeast; let stand for 5 minutes. In a large bowl, combine flour and salt. Cut in butter and shortening until crumbly., Combine the sour cream, eggs and vanilla; stir into flour mixture. Stir in yeast mixture until well blended (do not knead). Divide dough into four sections. Wrap each section in plastic; refrigerate for at least 2 hours., Combine cinnamon and remaining sugar; sprinkle 3-4 tablespoons on a work surface. Place one portion of the dough on cinnamon-sugar. Roll out to a 9x6-in. rectangle., Sprinkle center third of dough with 1 tablespoon cinnamon-sugar. Fold one unsugared section over center. Sprinkle top of dough with 1 tablespoon cinnamon-sugar., Bring remaining section of dough over cinnamon sugar and sprinkle with 1 tablespoon cinnamon sugar. Roll dough into a 12x8-in. rectangle. Cut into twelve 1-in. strips. Twist each strip several times. Repeat with the remaining dough., Place strips on ungreased baking sheets. Bake at 350° for 15-20 minutes or until golden brown. Cool for 1 minute before removing to wire racks to cool completely.

1 pkg. dry yeast
1 Tbsp. sugar
1/4 c. warm water
1 c. buttermilk
1/4 tsp. baking soda
1/2 c. butter, melted
2 eggs, beaten
4 to 5 cups Hot Roll Mix
Cinnamon Filling:
1/2 c. brown sugar
1/2 tsp. cinnamon
1/2 c. chopped nuts
Powdered Sugar Glaze:
1/2 c. powdered sugar
1/2 Tbsp. butter
1 Tsp. hot water

Steps:

  • In a small bowl, dissolve yeast and sugar in warm water. Set aside. bring buttermilk to a boil in a small saucepan; buttermilk should curdle. In a large bowl, combine buttermilk, baking soda, and 1/2 cup melted butter. Add eggs. When mixture is lukewarm, add dissolved yeast mixture. Gradually stir in 4 cups Hot Roll Mix until a soft dough forms a ball. On a lightly floured surface, knead dough about 5 minutes until smooth and elastic. Add additional mix if need to make a soft, but not too sticky dough. Lightly butter bowl. Put dough in bowl and turn to butter top. Cover dough with a damp towel and let rise in a warm place until doubled in bulk, about 1 hour. Generously grease 2 baking sheets. Punch down dough and roll out to a 12x20 inch rectangle. Brush dough with 3 tablespoons melted butter. Sprinkle cinnamon filling lengthwise over half of dough to within 1/2 in of long edge. Fold rectangle in half lengthwise to cover filling. Seal dough edges with the edge of a plate. With a pizza cutter, cut dough into 24 strips, about 3/4 inch wide. Twist each strip twice and place strips 1 inch apart on prepared baking sheets. Cover and let rise until doubled in bulk, about 30-40 minutes. Preheat oven to 375 deg. Bake 10-12 minutes, until golden brown. Brush on Powdered Sugar Glaze while rolls are still warm. Makes about 24 twists.

DOUGH
1/4 c warm water (105f to 115f)
2 pkg active dry yeast
1 1/2 c milk
1/2 c sugar
1 tsp salt
1 tsp cinnamon
5 Tbsp butter
2 eggs
5 c all purpose flour
SUGAR/SPICE MIX FOR ROLLING
1 c sugar
1 tsp cinnamon
1 tsp nutmeg
oil for frying

Steps:

  • 1. Dissolve yeast in warm water in a large bowl.
  • 2. In a saucepan, combine the milk, sugar, salt, cinnamon and butter. (Cut the butter into small pieces for easier melting.) Heat to 110F or lukewarm, but not too hot for the yeast mixture.
  • 3. Add milk mixture with the eggs and 2 cups of flour to the dissolved yeast. Beat until smooth. Beat in remaining flour. The dough will be soft and sticky.
  • 4. Let rise for about 1 hour, stir down.
  • 5. Turn dough out onto a well-floured surface. Roll in flour to coat.
  • 6. With a rolling pin, gently roll into an 8 x 24-inch rectangle. With a sharp knife cut into 1-inch crosswise strips.
  • 7. Bring ends of two strips together and twist strands loosely. Repeat with remaining strips.
  • 8. Let rise on floured board or pan for 20-30 minutes until almost doubled.
  • 9. Heat 1-inch oil in a skillet to 350F. Fry on both sides, about 3 minutes total. Drain.
  • 10. Coat in sugar and spice mixture.

2 tablespoons reduced-fat stick margarine
1/4 cup packed brown sugar

Steps:

  • Unroll both tubes of dough; press perforations and seams together to form two rectangles. Spread with margarine. Combine brown sugar and cinnamon; sprinkle over dough. Sprinkle with walnuts.
