Yield 3 3/4 cups

Number Of Ingredients 9

1 bag (12 oz., 3 cups) fresh or frozen cranberries
1 tangerine (about 6 oz.)
1/2 cup dried apricots, coarsely chopped
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
1/4 cup light molasses
3/4 cup raspberry vinegar
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla

Steps:

  • Sort and remove debris from cranberries; rinse and drain. Place cranberries in a 2- to 3-quart pan. Cut unpeeled tangerine into 1-inch chunks; remove and discard seeds. Using a food processor or a knife, finely chop tangerine. Add the chopped tangerine, apricots, brown sugar, granulated sugar, molasses, raspberry vinegar, pumpkin pie spice, and vanilla to pan. Stir to mix. Cook, uncovered, over medium heat, stirring occasionally, until berries are soft and begin to pop, 12 to 15 minutes. Let cool. (If making ahead, cover and chill up to 1 month.)

Tips:

  • Use fresh cranberries for the best flavor and texture.
  • If you don't have fresh cranberries, you can use frozen cranberries. Just thaw them before using.
  • Choose oranges and lemons that are heavy for their size and have smooth, unblemished skin.
  • Zest the oranges and lemons before juicing them. This will add a lot of flavor to the relish.
  • Use a sharp knife to dice the oranges and lemons. This will help prevent them from becoming mushy.
  • Add some chopped walnuts or pecans to the relish for a crunchy texture.
  • Serve the relish immediately or store it in the refrigerator for up to 2 weeks.

Conclusion:

Citrus cranberry relish is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It's perfect for Thanksgiving dinner, but it can also be enjoyed year-round. With its bright and tangy flavor, citrus cranberry relish is sure to please everyone at your table.
