Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green and snap easily when you bend them. Avoid beans that are limp or have brown spots.
  • Trim the green beans: Remove the tough ends of the green beans. You can do this by snapping them off or using a sharp knife.
  • Blanch the green beans: Blanching the green beans helps to preserve their color and crunch. To blanch the green beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are tender but still slightly crisp. Drain the green beans and immediately plunge them into a bowl of ice water to stop the cooking process.
  • Make the citrus vinaigrette: While the green beans are blanching, make the citrus vinaigrette. In a small bowl, whisk together the olive oil, lemon juice, orange juice, lime juice, honey, salt, and pepper.
  • Toast the pine nuts: Toasting the pine nuts adds a nutty flavor to the dish. To toast the pine nuts, heat a small skillet over medium heat. Add the pine nuts and cook, stirring constantly, until they are golden brown. Remove the pine nuts from the skillet and set aside.
  • Assemble the salad: In a large bowl, combine the blanched green beans, citrus vinaigrette, toasted pine nuts, and crumbled feta cheese. Toss to coat.
  • Serve immediately: Serve the citrus green bean salad immediately, while the green beans are still warm.

Conclusion:

This citrus green bean salad is a refreshing and flavorful side dish that is perfect for any occasion. The bright citrus flavors pair perfectly with the tender green beans and crunchy pine nuts. The crumbled feta cheese adds a touch of richness and saltiness. This salad is sure to be a hit at your next potluck or barbecue.
