CAMPARI CITRUS SODA

- Fill a tall glass with ice. Pour a shot of Campari over ice. Add 3 to 4 ounces grapefruit juice. Fill to top with ginger ale.
CITRUS ITALIAN SODA
Steps:
- 1) Squeeze the lemon, lime, and orange into a small glass. 2) Put the water and sugar into a small heavey sauce pan. Take one of the sprigs of mint and chop it up into small pieces and place it into the sauce pan. Turn on the heat for the sauce pan at a medium heat. Cook until the sugar has disolved into the water. 3) Combined the Tonic Water and citrus juice in a large drinking glass. 4) After the sugar water has cooled slowly pour it into the drinking glass with the Tonic Water and citrus juice. 5) Crush the ice in a food processor or blender. Take out the ice and pack it toghether into 3 pieces and place it into the drinking glass. 6) Place second sprig of mint on top of drink and serve.
CITRUS SYRUP FOR SOFT DRINKS

- Strain the citrus juices together into a small saucepan.
- Add the sugar, vanilla and pinch of salt. Heat until a gentle boil is reached. Then add the zest and turn off heat. Allow mixture to cool.
- Strain off the zest and refrigerate until needed.
- Mix citrus syrup with club soda or seltzer to desired strength for flavored soft drink.
