4 cups fresh baby spinach, chopped
2 tablespoons water
2/3 cup sliced water chestnuts, chopped
1/3 cup sour cream
1/3 cup mayonnaise
4 teaspoons vegetable soup mix
1 green onion, chopped

Steps:

  • In a microwave-safe bowl, combine spinach and water. Cover and microwave on high for 45-60 seconds or until wilted; drain. 2 tablespoons unsalted butter
1 medium shallot, finely chopped
3/4 teaspoon paprika
14 ounces canned or frozen artichoke hearts (about 2 cups), thawed, drained, coarsely chopped
8 ounces cream cheese
1 cup (or more) heavy cream
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup grated mozzarella

Steps:

  • Squeeze as much liquid out of the spinach as possible with a a clean dishtowel or paper towels. Melt butter in a large pan over medium-high heat. Sauté shallot until soft, 3-5 minutes. 1 pt (16 oz) sour cream
1 c mayonnaise
1 pkg knorr vegetable soup mix

  • 1. Thaw spinach in microwave, and squeeze dry.
