1/2 cup fresh squeezed clementine juice
4 ounces vodka
2 ounces Triple Sec
1/2 lime, juiced
4 slices clementine, for garnish

Steps:

  • Chill 4 martini glasses by filling each with ice and cold water. Combine all the ingredients in a cocktail shaker filled with ice and shake vigorously. Empty the martini glasses of ice water and strain the mixture between the 4 glasses. Float a slice of clementine in each glass and serve immediately.

I was watching a Claire Robinson holiday show; she does the "5 Ingredients or Less" show on the food channel. I had just purchased a crate of clementines at the store that day and happened to stumble on this episode where she mentioned the crates of clementines available during the holidays. I never associated them with the holidays before and now I'm so glad I know since I come across a lot of clementine recipes on 'Zaar and haven't always been able to find them. In case you're counting, this does have 5 ingredients if you ignore the water and garnish! Happy holidays! Cheers!

1 cup sugar
1 cup water
3 clementines, quartered
2/3 cup cranberry juice
1/3 cup lime juice
1 1/2 cups vanilla vodka
1 clementine, sliced for garnish

Steps:

  • Chill 6-8 martini glasses by filling with ice and water. Set aside while you prepare the beverage.
  • To make simple syrup, add sugar and water to medium saucepan. Juice the clementine quarters into the pan by squeezing them and then drop the spent rinds into the pan. Simmer until thickened, about 10 minutes. Strain into a glass measuring cup and set aside to cool.
  • To make the cosmos, place the cooled clementine simple syrup into a cocktail pitcher. Add the cranberry juice, lime juice, and vanilla vodka. Cover the pitcher and shake vigorously to blend or stir vigorously. Pour into empty chilled martini glasses.
  • Garnish with a slice of clementine and serve.

I was very pleased when Dad agreed to share his recipe for his famous Maccarita, my all-time favorite cocktail.

1 1/2 limes, 1 juiced and 1/2 for the glass rims
Fine sea salt
3 shots any good blanco tequila, such as Patron Silver
1 shot Cointreau
1 shot triple sec
2 clementines, juiced
Ice cubes

Steps:

  • To salt the rims of two glasses, use the 1/2 lime to wipe around the rim of each glass. Pour out a generous 6-inch line of salt. Roll the outside rim of each glass along the salt line to lightly salt the outside rim of the glass (not the inside or it will make your cocktail too salty when you take the last sip).
  • Pour the tequila, Cointreau, triple sec, clementine juice and lime juice into a cocktail shaker. Fill with ice. Shake for 20 seconds until your hands get cold.
  • Strain into the prepared glasses and drink responsibly.

6 clementines or 4 oranges, zested and juiced or 2 cups juice
1/2 cup water
1/2 cup sugar, plus 2 tablespoons
2 limes, 1 juiced and 1 cut into slices, for garnish
6 ounces tequila, optional
4 drops yellow food coloring
2 tablespoons kosher salt

Steps:

  • In a small saucepan, combine the clementine zest with 1/2 cup of water and 1/2 cup of sugar. Bring the mixture to a boil over medium heat until the sugar has dissolved, then turn off the heat and let cool.
  • Combine the juice from the clementines, the juice of 1 lime and the cooled simple syrup in a large pitcher. Stir to combine. Add tequila, if desired.
  • In a resealable bag combine the remaining 2 tablespoons of sugar with the food coloring. Shake and massage the bag to combine the food coloring with the sugar.
  • On a flat plate, combine the colored sugar and salt and spread evenly across the plate. Dip the rims of 4 margarita glasses in water and then in the sugar mixture. Fill the glasses with ice and evenly distribute the margaritas among the glasses. Garnish with slices of lime and serve.

3 medium clementines (approx. 12 ounces)
1 1/2 cups white sugar
3/4 cup softened butter
3 eggs
2 cups white flour
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons clementine zest
2 tablespoons clementine juice (from 1 clementine)
2 tablespoons softened butter
1 1/3 cups icing sugar
1 tablespoon orange liqueur (optional)

Steps:

  • Wash and remove stems from clementines, cut into quarters, process clementines with sugar in food processor until smooth.
  • Add butter, then eggs; process until smooth Add flour,baking powder, process until combined.
  • Spoon into greased 8-cup bundt pan.
  • Bake at 350 degrees approximately 50 minutes, until golden (depends on your oven). Cool on rack 10 minutes, then remove cake from pan and leave on the rack until cold.
  • Icing:.
  • Grate rind and squeeze juice from the clementine.
  • Measure 2 tsp rind and 2 tblsp juice into a bowl, add butter, icing sugar and liqueur.
  • Mix until icing is smooth.
  • Drizzle the icing over the cooled cake.
