Steps:

3 medium bananas, smashed, about 1 1/3 cups
1 cup shredded sweetened coconut, plus 2 tablespoons reserved

Steps:

3 large eggs
2 teaspoons vanilla extract
2 cups mashed bananas
3 cups all-purpose flour ({385 grams})
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
3 teaspoons cinnamon
1/2 cup chopped walnuts ({optional})

Steps:

  • In a medium-size bowl, mix together the oil, sugar, eggs, vanilla and mashed bananas in a bowl. Set aside.

1 1/2 teaspoons cinnamon

1/2 cup packed brown sugar
2 eggs, slightly beaten
1 teaspoon vanilla
1 cup mashed banana
1/2 cup chopped walnuts or 1/2 cup pecans
1 (8 ounce) package cream cheese
1/4 cup packed brown sugar
1 egg
1/2 cup shredded coconut

Steps:

  • Thoroughly grease the bottoms and sides of 2 loaf pans; set aside.
