1/2 recipe Pate Brisee
All-purpose flour, for dusting
Fresh Coconut Curls
1 large whole egg, lightly beaten, plus 4 large egg yolks
3 cups canned unsweetened coconut milk
2/3 cup granulated sugar
5 tablespoons cornstarch
1/4 teaspoon salt
2 ounces semisweet chocolate
1 cup heavy cream
1/4 cup confectioners' sugar
Chocolate Curls

Steps:

  • Preheat oven to 375 degrees. On a lightly floured work surface, roll out dough to a 12-inch round, a bit less than 1/4 inch thick. Fit dough into a 9-inch pie plate. Using kitchen shears or a sharp knife, trim crust to a 1/2-inch overhang all around. Fold under overhang so it extends slightly beyond edge of pie plate. Crimp edge as desired. Prick dough all over with a fork. Brush rim of dough with beaten egg. Chill pie shell until firm, about 30 minutes.
  • Line chilled pie shell with a round of parchment paper, leaving a 1-inch overhang. Fill with pie weights or dried beans. Bake until edges of crust just turn golden, 15 to 20 minutes. Remove parchment and pie weights. Return crust to oven, and continue baking until golden all over 15 to 20 minutes more. Place pie shell on a wire rack to cool completely. Reduce oven temperature to 325 degrees.
  • Place Coconut Curls on a rimmed baking sheet and bake, tossing occasionally, until fragrant and lightly golden, about 10 minutes. Set aside.
  • Prepare an ice bath; set aside. In a bowl, lightly whisk egg yolks; set aside. In a saucepan, whisk together coconut milk, granulated sugar, cornstarch, and salt. Bring to a simmer (do not boil), and cook, whisking constantly, 3 to 4 minutes.
  • Whisk a quarter of hot-milk mixture into egg yolks; whisk in remaining milk mixture. Strain into a clean saucepan, and cook over medium-high heat, whisking constantly, until custard is thick and bubbles appear in center, 2 to 3 minutes. Transfer to a medium bowl, and cover with plastic wrap, pressing it directly onto surface to prevent a skin from forming. Set in ice bath until completely chilled, 30 to 35 minutes. (Filling can be kept in refrigerator, covered with plastic wrap, up to 1 day.)
  • Melt chocolate in the top of a double boiler or a heatproof bowl set over a pan of simmering water (do not let bowl touch the water), or in the microwave. Stir until smooth, and set aside until cool to touch, stirring occasionally.
  • Using a pastry brush, coat inside of cooled crust with melted chocolate. Place in refrigerator or freezer until firm to touch, about 10 minutes.
  • Fill crust with coconut custard, spreading evenly with an offset spatula. In the bowl of an electric mixer fitted with whisk attachment, combine cream and confectioners' sugar; beat until soft peaks form. Using a small offset spatula, spread whipped cream on top of custard. Refrigerate pie at least 3 hours before serving. Garnish with toasted Coconut Curls and Chocolate Curls just before serving.

1 9-inch deep dish pie crust, baked per package instructions and cooled
2/3 cup sugar
1/4 cup cornstarch
1 pinch salt
2 cups half-and-half
6 large eggs, at room temperature, lightly beaten
2 tablespoons unsalted butter
1 tablespoon vanilla extract
1 1/4 cups shredded coconut, lightly toasted
1 cup heavy cream, very cold
1 tablespoon powdered sugar

Steps:

  • To make Custard: In heavy saucepan, whisk together sugar, cornstarch, an salt.
  • Slowly stir in the half-and-half until smooth.
  • Bring to a boil over medium-high heat, stirring constantly.
  • Lower heat to maintain simmer and cook, stirring constantly 2 to 3 minutes.
  • Place egg yolks in a bowl and slowly whisk 1 cup of hot cream into them.
  • Pour mixture back into the saucepan and cook over low heat, stirring constantly until the mixture thickens and just begins to"steam", 4 to 5 minutes.
  • Do not let boil.
  • Remove pan from heat and stir in butter and vanilla until smooth.
  • Strain through a fine-mesh sieve into a bowl.
  • Cover with plastic wrap directly on the surface and cool on a wire rack.
  • When cool, gently fold in the coconut.
  • Chill for 1 hour.
  • Make the whipped cream: Put cream, sugar and vanilla in a bowl and beat until thickened using an electric mixer on high.
  • Assemble pie: Pour the cooled custard into the prebaked crust.
  • Mound the whipped cream over the filling and sprinkle with the coconut and nuts.

This is one of Emeril Lagasse's recipes and it is wonderful. The coconut custard is so smooth, creamy and absolutely luscious. The original recipe called for unsweetened flaked coconut, but I use sweetened because I'm unable to find unsweetened and I think you can substitute without an adverse affect. I also cut the vanilla in half and only use 1 teaspoon. I make the meringue while waiting for the milk mixture to scald to save on time. The original recipe calls for a whipped cream topping, but I use a meringue so use whichever one you prefer.

1 1/2 cups whole milk

  • Pour yolk mixture and slurry mixture into scalded milk mixture in saucepan and whisk vigorously over medium heat until it comes to a boil.
  • Cook until thickened about 2-3 minutes.
  • Remove from heat and add coconut, vanilla and butter.
  • Stir until uniformly incorporated.
  • Pour into cooled pie shell.
  • Spoon meringue on top spreading to the outer edge of the pie shell.
  • Sprinkle 2 tbsp of coconut on meringue.
  • Bake at 325 for approximately 10 minutes or until meringue is very lightly browned.
  • Let stand at room temperature for about one hour then refrigerate.

  • Combine egg whites, Cream of Tarter and vanilla extract.
  • Beat on high with electric mixer until soft peaks form.
  • Gradually add sugar about 2 tbsp at a time while beating egg whites.
  • Continue to beat until stiff glossy peaks form.

1/2 teaspoon salt
1/2 teaspoon sugar
1/4 cup shortening, chilled, cut into pieces
1/3 cup chilled unsalted butter, cut into pieces

1 cup evaporated milk
1 cup heavy cream
1/2 cup sugar
6 egg yolks
1 tablespoon cornstarch
1 tablespoon softened unsalted butter

Steps:

  • Preheat the oven to 350 degrees.
  • Make the crust: Sift flour, sugar and salt together. Using a food processor or pastry cutter, blend butter and shortening into the flour mixture until pea-sized pieces form. Slowly add the water until the dough just comes together. Wrap the dough in plastic wrap, flatten into a disk, and refrigerate for at least one hour. Roll out chilled dough on a floured surface until it is large enough to create a 1-inch overhang on a 9-inch pie pan. Using a fork, poke several holes along the base of the crust. Finish the rim of the crust to your liking and chill until firm, 30 minutes. Line with parchment paper and pie weights. Bake until the edges are pale golden and the crust will hold its shape, 25-30 minutes. Carefully remove the parchment and weights and bake until the crust is dry and pale golden, 5-10 more minutes. Remove from oven and cool.
  • Make the filling: Decrease oven temperature to 325 degrees. Pour evaporated milk, cream and sugar into a saucepan. Over medium heat, bring to a boil, then immediately remove from heat. Using a whisk attachment on an electric mixer, beat egg yolks until they appear pale and fluffy. Add cornstarch and butter; continue beating until they are fully incorporated. Add vanilla, coconut extract and cream of coconut. Set the mixer on a low speed and slowly add the warm cream mixture to the egg mixture. Pour the filling back into the saucepan and cook over low heat for 10 minutes, stirring constantly, until the custard has thickened to the consistency of runny yogurt. Pour coconut filling into the baked pie shell and bake until the edges are barely puffed and the center wobbles like Jell-o when you give the pan a shuffle, about 20 minutes. Remove from oven and allow the pie to cool completely, 2-3 hours
  • Make the topping: Place coconut on baking sheet and toast until light brown, about 7 minutes. Whip cream, sugar and vanilla to stiff peaks.
  • To finish: Place a large mountain of whipped cream in the center of the pie and, using a small offset spatula, create a dome shape. Sprinkle the entire dome with toasted coconut. Refrigerate until ready to serve
