2 envelopes unflavored gelatin
1-1/4 cups cold water, divided
2 cups sugar
2 large egg whites, lightly beaten
1 teaspoon vanilla extract
2-1/2 cups sweetened shredded coconut, chopped
2 to 3 drops red or yellow food coloring, optional

Steps:

  • In a large bowl of a heavy-duty mixer, sprinkle gelatin over 1/2 cup cold water; set aside. In a heavy saucepan, combine sugar and remaining water. Cook and stir over low heat until sugar is dissolved. Cook over medium heat until a candy thermometer reads 234° (soft-ball stage), stirring occasionally. Remove from the heat; slowly pour over gelatin, beating constantly. Immediately add egg whites. Use the candy thermometer to make sure mixture is at least 160°. Continue to beat 15-20 minutes longer. Beat in vanilla. Pour into a greased 9-in. square pan. Cool for 3 hours or until firm enough to cut into squares., In a shallow bowl, combine coconut and food coloring if desired. Roll marshmallow squares in coconut. Store in an airtight container in the refrigerator.

I got this off someone at work. It is so simple but tastes sweet and it always seems to disappear so fast when I make it. No cooking involved.

25 digestive biscuits
100 g glace cherries
100 g marshmallows
300 g condensed milk
50 g desiccated coconut

Steps:

  • Crush biscuits.
  • Half cherries and put into mixture.
  • Half marshmallows if using big ones, or just put mini marshmallows into mixture.
  • (i use 1/2 a bag, no need to measure).
  • Pour in condensed milk.
  • Mix together.
  • Place a large piece of greaseproof paper out flat and cover with the coconut.
  • Place mixture into a log shape onto the paper and roll in the coconut. Add more if needed.
  • Roll up in paper tight to keep log shape.
  • Place this into a fridge to set for a couple of hours.
  • Can be eaten straight from the fridge or is less heavy if left out before eating.
  • I sometimes add a tablespoon of toffee sauce into the mix.
  • Try it, it's just so easy.

250g butter , softened
140g golden caster sugar
1 egg
1 tsp vanilla extract
300g plain flour
100g desiccated coconut
about 175g raspberry jam
18 large pink and white marshmallows , cut in half across the middle
25g desiccated coconut

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Beat butter, sugar, egg and vanilla together with a pinch of salt until smooth. Fold in the flour and coconut to form a dough.
  • On a floured surface, shape the dough into a round, then roll to the thickness of a £1 coin. Cut into rounds using a 6cm cutter. Lift onto baking sheets, then bake for 14 mins until light golden. Cool for a few mins, then transfer to a cooling rack.
  • To sandwich the biscuits, lay half out on a baking sheet, under-side up. Put ½ tsp jam onto each one, top with a piece of marshmallow, then bake for 2½ mins or until just melted. Remove from oven, then quickly top with the other biscuits, pressing down so that the marshmallow sticks them together and just oozes out. Cool for 10 mins. Put the coconut and remaining jam onto plates, dip the edges in the jam, then roll in the coconut. Will keep in an airtight tin for up to 3 days.
